  • "Karela ka bharwa" is a traditional Indian dish made with stuffed bitter gourd. Here's a simple recipe to prepare this delicious dish:
    Ingredients:
    - 2 medium-sized karela (bitter gourds)
    - 2 tablespoons oil
    - 1 teaspoon cumin seeds
    - 1 medium onion, finely chopped
    - 1 teaspoon turmeric powder
    - 1 teaspoon red chili powder
    - 1 teaspoon coriander powder
    - 1 teaspoon cumin seeds
    - 1 teaspoon saunf seeds
    - 2 tablespoons chana dal
    - salt as per taste
    - 1 teaspoon dry mango powder (amchur)
    Or aam ka achar
    - Salt to taste
    - 1 tablespoon chopped coriander leaves
    - Lemon juice (optional)
    Instructions:
    1. Prepare the Karela:
    - Wash the karela and scrape off the rough outer surface lightly. Make a slit lengthwise and remove the seeds.
    2.Prepare Masala:
    - In a mixer grinder add chana ka dal,saunf seeds,jeera seeds,dhania powder, turmeric powder and red chilli powder.Grind fine coarse powder.
    3. Prepare the Filling:
    - Heat 1 tablespoon of oil in a pan over medium heat. Add cumin seeds and let them splutter.
    - Add the chopped onions and sauté until golden brown.
    - Add stuff Masala powder. Mix well and cook for 2 minutes.
    - Cook for a few minutes until it gets roasted and turns aromatic.
    - Add dry mango pickle, salt, and chopped coriander leaves. Mix well and cook for another minute. Remove from heat and let the mixture cool down.
    4. Stuff the Karela:
    - Once the filling mixture has cooled, stuff it carefully into the prepared karela. Secure them with a thread if necessary to prevent the filling from falling out during cooking.
    5. Cook the Stuffed Karela:
    - Heat the remaining oil in a pan over medium heat. Place the stuffed karela in the pan and cook them, turning occasionally, until they are evenly browned and cooked through. This should take about 15-20 minutes.
    - You can also cover the pan while cooking to ensure the karela becomes tender.
    6. Serve:
    - Once cooked, remove the thread if used, and serve the stuffed karela hot. You can drizzle some lemon juice on top for added flavor.
    Enjoy your "Karela ka bharwa" with roti, paratha, or as a side dish with rice and dal.
