Ingredients:
- 2 medium potatoes, peeled and diced
- 1 medium eggplant, diced
- 1 cup dried urad dadumplings (bari)
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 2 tomatoes, finely chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon jeera powder
- 1 teaspoon black pepper powder
- Salt to taste
- Fresh coriander leaves for garnish Instructions:
1. Prepare the Bari:
- Heat 1 tablespoon of oil in a pan and fry the dried lentil dumplings (bari) until they turn golden brown. Remove and set aside.
2. Cook the Vegetables:
- In the same pan, heat another tablespoon of oil.
- Add cumin seeds and let them splutter.
- Add ginger-garlic paste and sauté for another minute.
- Add the chopped tomatoes and cook until they become soft and the oil starts to separate.
3. Spice It Up:
- Add turmeric powder, red chili powder, jeera and black pepper powder, and salt. Mix well.
- Add the diced potatoes and eggplant. Stir to coat the vegetables with the spices.
- Add a little water, cover the pan, and let the vegetables cook on medium heat until they are tender.
4. Combine and Simmer:
- Once the vegetables are cooked, add the fried baris Mix everything well.
- Add a little more water if needed to get a desired consistency. Cover and let it simmer for another 5-10 minutes, allowing the flavors to meld together.
5. Garnish and Serve:
- Garnish with fresh coriander leaves.
- Serve hot with rice or chapati.
