Soup/Broth recipe for 2 small/regular servings of soup; or 1 large soup serving for whom loves more soup!:
2cups water
1/2cup katsuobushi (dried bonito flakes), packed
1/4cup iriko/niboshi (dried anchovies)
1 piece of kombu/konbu (dried kelp), about 1-2”x5”
1tbs mirin
1tbs sake
1tbs soy sauce
1/2tbs sugar
Few dashes of salt
(save the strained bits for tsukudani rice-topping in the freezer and for the future if you like)
For a faster, easier short-cut: just use Hondashi powder (packet) or Hon-Tsuyu/Men-Tsuyu) concentrated soup stock (bottle). But, making the soup from scratch is much tastier.
1-2 servings of frozen or dry udon noodles
Topping possibilities:
Handful of baby spinach, blanched
Nori dried-seaweed strips or sheets
Fish cake, sliced
Green onion, sliced,
Shimeji mushrooms
Poached egg
Onsen tamago, egg poached within shell
Ajitsuke tamago, ramen soft-boiled egg
Sesame seeds or Shichimi Togarashi (Japanese seven-spice)
For other popular Udon noodle soup dish variations, simply add different toppings:
Beef/Niku Udon - add 1/4lb. of thin sliced rib-eye or chuck beef, marinated in 1/2tbs soy sauce and 2tsp sugar, and stir-fried
Kitsune Udon - add a sheet of Inari-Age or Abura-Age (deep-fried tofu pouch) and sliced Narutomaki fish-cakes
Chicken Udon - add bite-sized chicken-thigh pieces cooked in the broth
Chashu Udon - add slices of Japanese pork chashu
Tempura or Kakiage udon - add tempura or kakiage tempura
Nabeyaki Udon (hot-pot style) - add spinach, 1” of carrot sliced, Kamaboko fish-cake sliced, Shimeji mushrooms, bite-sized chicken-thigh pieces cooked in the broth, poached or onsen-tamago egg, Mitsuba (Japanese parsley), shrimp tempura, etc.

is there any way to add spice to it im thinking maybe chili oil when cooking broth?
Hmm... for Japanese udon and to still make it kinda traditionally Japanese in flavor, you could try:
- Spicy chili miso, topping (like a spoonful). These are usually homemade. But, there's also this bottle: amzn.to/3roHZQf
- Japanese Ra-Yu, topping. Bottled chili-oil with crunchy bits. Many diff kinds; but here's one: amzn.to/3E1fkEm
- Shichimi Togarashi, sprinkle/topping.
There’s a spice you can add on top of the Udon called Tongarashi it’s a red pepper type spice.

So I made this last night for the first time. The broth was very clear, the noodles came out perfectly (cooked according to packaged instructions since I could only find dried noodles), and the eggs were perfect. This is my go-to udon recipe now, way nicer than the prepackaged udon you can buy in the store.

I actually made the soup step by step the other day and it was very delicious!! Honestly it was so good! :) thanks for the recipe. It takes a bit of time but it‘s not difficult to make and doesn‘t create a mess.

Does it taste like fish/ fishy? I dont like fish so Im scared I wont like it
@@Celtravels It has a bit of a fishy flavour, but it‘s subtle and not a strong smelly fish flavour. If you don‘t like it then maybe you won‘t like this recipe, but give it a try nonetheless.
I found that using instant dashi has very little fishy smell, but fresh dashi tastes better in my opinion

is it okay if i make the broth without kombu? theres no kombu here?
Yes, it should work too! Imo, kombu doesn't add much flavor anyways, as much as the anchovy and katsuobushi.
Is it bad that I boil my noodles in the broth right after straining the broth?
It's doable, but not ideal. The noodles will turn more brown, and the broth will become cloudy from the noodle starches.

Can I use something else other than sake?
Just using mirin is fine (since it has alcohol too). Or, you can leave out sake altogether. Or, white wine (will taste slightly different tho, but still good).

Don't you have wooden spatula ? Keep using plastic 1tp measuring spoon to cook .
you may want to buy a good cooking utensil instead of using the short plastic measuring spoon for cooking.
I tried making this at a pretentious little dumpling shop in Toronto and my boss kept saying the broth is too murky😞😔
If you want it super clear and clean (and boring and less tasty, imo, lol)... don't let bonito flakes nor kelp boil (J chefs usually turn off heat once water is boiling, then put in the bonito flakes & kelp and let it steep for 15-20mins in hot water)... also, when straining, no squeezing out the bonitos flakes. Also, no anchovy.
