Edit: I logged in and checked if I did lose a heart on the Noelle library run, and I did but on the other hangouts I didn't lose a heart.

She's a nigh omnipotent witch who can see into the past, present, & future, see through lies, teleport great distances, etc. Even Scaramouche, a Fatui Harbinger said that her abilities were making her a thorn in his side. When you're powerful enough to ruin a harbinger's plans, you deserve to be 5*. Also she says that she just doesn't like fighting because it's wasted energy that could've been spent on her study of astrology, so why would she fight when just peacing out is viable?

They were probably just too lazy to program different genders properly (something you can see in the rest of the game) at least for now.

If you go to the Traveler's dialogues thing there's this one where Paimon talks about hardworking being hard because Huffman working hard everyday yet has the "ever-so relaxed Kaeya as his boss" and the Traveler responds by saying Jean is the Acting Grand Master and she works the hardest and Paimon responds with something like "Venti's the God of Mondstadt, and he's the laziest of them all!"
Its kinda sad that Noelle is still not a knight and yet the Traveler who's just popped out of nowhere became an honorary knight😭

I'm sure when Noelle learns to relax a bit more, Jean will change her tune. Also, we did defeat Stormterror. So an "honorary" title is a bit justified when you save Mondstadt.
