I steam my milk until it boils. I like it nice and hot. This temperature thing is nonsense. Yes you want to texture the milk to get the wet paint look because that means its blended well. If you do not get the wet paint look its more than likely because it has too much froth from allowing too much air in.

Interesting. I need to try this out - I've never managed good foam beyond 145F!
Steaming the milk until it boils will make it bitter and a little burnt. If you keep it under or until 60C it will be sweet and creamy.
