Watching this bit strikes me how much time were all willing to devote to “training” in the hope that it will make us faster, without really knowing or understanding what underlying mechanisms exists or how we can optimise their improvement. We literally operate on the basis of blind trust (in TR or coaches) and brute force (just doing something over and over and hope we get better at it)

Would you advocate eating an 80%+ plant-based diet for cycling?

For sure! There are great cyclists that eat 100% plant based.

I think there’s a difference between “can you do it” and “is it necessary”. You certainly can, but it adds no benefits over an omnivorous diet, and also risks under nutrition in some areas if you aren’t careful (eg B13). So essentially yes you can do it, but don’t look to pursue it as if it’s going to deliver you any performance benefits over an omnivorous diet - rather that it has drawbacks but can be made to work *just as well as* an omnivorous diet if you are careful you don’t miss out on certain key nutrients and likely need to supplement
