The pesto type sauce is actually mint sauce and is usually served with lamb, the meatball was ""pork stuffing"" and is flavored with sage. The sausage wrapped in bacon are called ""pigs in blankets"", the piece of pork is known as ""crackling"" and is the skin/rind of the pork and the large disc is a Yorkshire pudding. Sausages are sometimes cooked with the Yorkshire pudding and the meal is refferred to as ""Toad in the hole"" for reasons unknown to mankind.

Yorkshire pudding is delicious with or without gravy. You should try British Toad in the hole, Which, is sausages cooked in the Yorkshire pudding. Just divine. Look up Toad in the hole chuck, you will love it. Have a great day, Jeff.

there is no technique to eating it, just shovel it in 555. But in all seriousness, some ppl put the gravy in the Yorkshire pudding which is the bread, and dip the meat in it, or just pour gravy over every inch of the plate. The green sauce was probably the mint sauce for the lamb. We usually have either mashed or roasted potatoes but not both so that is thai style. That ball might have been dressing/stuffing.

We don’t tend to mix our roast meat like that. That looks like a stuffing ball inside the Yorkshire pudding.

@@notime2bhungry That is exactly my point. It is a menu created for maximum business, not really a menu created on the basis of cuisine. A restaurant with low turnover cannot possibly hold fresh ingredients for such a vast menu, which suggests that much of it is frozen then nuked.

Of course you're gonna get loads of this but all the same. I also know you're a pretty accomplished cook yourself so i'm not trying to teach you how to suck eggs here just giving some tips on it. EATING/ COOKING A SUNDAY ROAST 101: Gravy: Should be used to drown the entire meal. I'd say this is personal choice but in this case it really isn't. Anyone who says otherwise is stupid and shouldn't be listened to. About anything, ever ( Joke, sort of, well not really 😂). Thick or watery is down to you but I prefer it thick enough to apply tiles to a bathroom wall. Add the juices from the meat to it to elevate the taste. Look for "Bisto" Gravy Granules in a farrang store/ the foreign/ imported foods aisle. It really is the original and best. They have versions for both beef and chicken but tbh you can use either on any meat if that's all you've got. Saucy Sauce: Green = Mint Sauce for Lamb. White Creamy = Horseradish ( from the root vegetable) for Beef.You can also have English, Coarse Grain or Dijon mustard with beef. White/ Opaque = Apple Sauce for Pork ( but i'm guessing you worked that one out yourself lol). Bread Thing: Is a "Yorkshire Pudding". A battered deep round thingy. This should be filled with gravy imo. Sausage: A "Pigs in Blankets". A small/ cocktail( can also be full sized) sausage wrapped in bacon. Tbh I find if the 'bacon' isn't the British style of bacon then it rarely works correctly. Roast Potatoes: If you ever decide to recreate the meal at home then par-boil them, drain and shake them vigorously in a colander. The more 'fluffy' the edges then the more crispy they become. Cook in a deep/ high sided tray in the oven with about 5mm of oil covering the entire tray PRO TIP: Once you've done par-boiled them rest them in the colander in an empty saucepan with a lid over them and drop a few leafs from some fresh rosemary in & let them sit and steam in their heat for about 10-15 minutes. When you put them in the oil make sure it's already nice and hot ( at least 200C) and throw some garlic cloves and the rosemary leafs in the oil at the same time. The rosemary and garlic will take them to the next level. VEG: All down to personal taste this one but IMHO you're missing out if you don't have roast carrots and roast parsnips. Peel them and cut in half length ways. No need to boil them 1st. Drop them in the same deep pan as either the roast potatoes or the tray with the meat in. In with the meat will mean they roast in the meat juices, in with the potatoes will give them a more 'natural' / earthy flavour. PRO TIP: Drizzle honey over the carrots before roasting ( Don't do this with the parsnips as they will become naturally sweet anyway). Personally i'd never put mashed potatoes on a roast plate but it's a personal choice thing so whatever works for you. MEAT: Low & Slow is always best. Beef especially is best Rare or Medium Rare. Personally I like my joint to be oozing blood when carved. LET IT REST! For a joint you've cooked for 90 mins you want to let it rest for at least 15 minutes before carving or the meat becomes a lot tougher and there's science to prove that **( In the UK it's fine to eat beef rare/ bloody as hell. You will know best if that's the case in Thailand)**

It is what you call Texmex. I believe they described it on the menu as well. Yes to me the food has more flavor on the US border in Mexico compared to Mexico city.
