pumpkin pierogi: i don't really follow a recipe for this except for the noodles, it's more of an intuition based recipe but here's what i do...
sourdough noodle dough: mix roughly 1 cup flour with about 1/2 cup of starter, adding a bit of water if too dry. ferment for a few hours before making.
filling: i make homemade garlic mashed potatoes and add in nutritional yeast, salt, pumpkin puree, and sage.
pierogi: roll out the noodles and cut into circles, adding filling, folding and pinching the edges to close them up. boil them for 1 minute and remove.
to serve: caramelize sweet onions in (dairy free) butter and herbs, and add in the pierogies to fry up and get crispy in more butter. top with kraut and some sort of mayo or sour cream. yum!
mushroom alfredo pasta: for the "alfredo sauce" i used my classic plant-based cheese sauce recipe: www.calicoandtwine.com/blog/v... but i ommited the carrots to give it more of an alfredo vibe
veggie broth: i loosely followed this recipe: wallflowerkitchen.com/gut-heal... but really just added in whatever veg i had on hand :)

I have a playlist made, it has some productivity and good feels in it as well. I would also separately recommend Justin Rhodes (farmer/vlogger, has a full blown self sufficient farm now), Back To Reality (they focus on back to Eden, and organics.), The Rusted Garden (good garden information and seedlings), Gavin Webber (organics, fruit trees, raised beds, etc.), and last but not least, your own practice and experience.

I really really appreciate you talking about how it's not possible for everyone to be 100% self sufficient. So many otherwise nice and helpful vlogs/blogs/articles are ruined by the overwhelming entitlement and snobbishness people seem to feel because THEY have the ability to be 100% sustainable, so anyone who does any lesser is therefore terrible. People have disabilities that make it near impossible to garden very effectively, or financial issues that prevent them from buying the supplies they need to start, or a myriad of other issues. Your vlogs are so nice and cozy and don't presume anything of or on the viewer, no forcing products or ideas onto them, simply documenting a life and giving advice or explaination where helpful. I appreciate this 💚 I try my best to do whatever I can but with the health issues I have I never help to do big or strenuous tasks or I'll pass out cold and get hurt
Plus supporting we each other as a community is great 💛 maybe I don't have the stamina to maintain a big enough berry garden to supply what I need for the year's jam supply, but the farmer down the street does and will give me and my best friend a discount if we help pick them
And I can trade jam for eggs to someone else who has chickens
No man is an island
I would start small by building your canning jar collection . maybe once a month pick up a case or post online that your looking for jars . Then find yourself someone that knows how to can . Some farms will welcome the weekend help in exchange for produce . You wouldn't believe how many farm stands shut down because lack of help . Just be honest and sincere with your intentions . If you cant do manual labor then offer computer skills that you might have . believe me most farmers would love the extra help in that department . start there because if your looking to get into poultry or cattle or even goats ( you never stop learning ) you will to find people again to walk you along with the animals . That's a ton of work . lol all my stock are pets . Start a seed collection for your garden (seed swaps on facebook) When you tickle the earth with a hoe it will laugh with a harvest. I pray with all my heart to one day get just a small little house on a small piece of land to call my very own. I want to live just like this, all natural and gentle. I want to be self-sufficient with my own chickens for eggs and I'd love to make pottery and art & carpentered pieces for others. Such a blessed life of perfection, a dream life.

I live in the suburbs, just a small 3 bedroomed house with an average front and back garden...this Summer my little garden has provided at least 80% of our produce. We still have potatoes to dig, corn to harvest and tomatoes coming on. We grow as much as possible and preserve a lot too. It's a lot of work but so worth it. Nothing beats that taste of homemade...Blessings 😊
I'm from Poland and I used to make pierogi with my grandmother as a child. It's a shame to admit I've never tried to do this by myself, it's time to try! :) All the best ;*

In russian it is "vareniki". The filling may consist potato, cheese, cherry, strawberry and so on. Boil vareniki in hot water. Eat sweet vareniki with sour cream or honey.

I just discovered your channel and I absolutely love it. It’s so calm and beautiful and one day I hope to have a life similar to this. Unfortunately I can’t be totally off the grid, nor can I be completely self sufficient because I have some health problems and idk how that will be down the road. But I can only hope that I can take care of my health right now, so that I can achieve living a life like this. Because in the end, this is what I want and I intend to get it, one day.
