  • How To Make Traditional Red Beans & Rice
    **** A New Orleans Classic...
    All you need is...
    1 lb ( 16oz) of Kidney Beans... ( Kidney beans is key!)
    1 large onion chopped ( loosely)
    1 EACH Red, and Orange Bell Pepper ( you can use any color combo you like). **** NOTE... Green Bell Peppers have a strong distinct flavor, if using one know the flavor of the dish will be slightly different).
    12oz of Sausage... ( most recipes call for Andouille sausage which I find to be too spicy, but if spice is what you like use it.) I used Kielbasa
    NOTE... Smoked Ham is the traditional meat for Red Beans...
    10 cups of water
    1 1/2 tsp Ground Mustard
    1 tsp Salt
    1/2 tsp ground black pepper
    1 1/2 tsp Oregano
    1 tsp Onion Powder
    1tbsp minced garlic ( or if using fresh cloves 2 large or 3 small minced)
    Steps:
    1) Soak the beans in a large bowl of water... 3 hours minimum.. over night is best
    2) after chopping up the onions and peppers ( and garlic if using fresh cloves) ADD all to a LARGE pot with 1 tbsp olive oil to begin to saute.
    3) after onions and peppers have had time to saute add the water
    4) Drain the beans and rinse off
    5) Add the beans to the water, then add the seasonings AND bay leaves
    6) Cover and bring to a boil
    7) Once boiling add sausage, reduce the heat to a low simmer, cover leaving the top off a little to allow the steam to escape.
    8) Reduce down 1/2 of total liquid... 3-8 hours time.
    9) Stir the beans every 90 minutes... taste throughout the cooking process to see if more salt or pepper is needed.. ( it should NOT be necessary but always taste)
    10) 25 minutes before being done make a pot of rice.
    11) when the beans are the soft textures and the liquid is a thick (cream soup like) consistency turn off the heat and serve.
    NOTE... Red Beans are to be served WITH the rice ( over top or around) the 2 are not to be served separately...
    ... Condiments traditionally seen on the table when eating red beans are ..
    Yellow Mustard ( I LOVE mustard in my beans!)
    Red Wine Vinegar
    Hot Sauce ( Crystal, Texas Pete, or Tabasco)
