I actually think the force choke is the moment when we know definitively that baby yoda knows who his guardian is. He thought Kara was hurting Mando so he tried to stop it. Before that he kinda used the force indiscriminately. He saved Mando from the mudhorn but he also healed Grief.
Why are people surprised about the force choke? Didn't Yoda say attachment leads to the Dark Side and Yoddler fears losing the Mandolorian, the only person to genuinely care for him in who knows how long. So fear leads to hate, hate leads to anger, anger leads to suffering. So is it any wonder Yoddler manifested a Dark Side ability.

This is when you know baby yoda definitely knows Mando is protecting him and doesn’t want him to get hurt. But he also doesn’t recognize Grief as an enemy at that point and heals him.
For people wondering, how Baby Yoda knows how to use all these force powers is actually pretty simple. If Yoda's race is naturally force sensitive, then it would make sense that Baby Yoda's parents probably taught him how to use the force as soon as he could walk. That way he could always defend himself if necessary. Like when we teach small children to swim, just in case.
Fun fact, even though the Empire is in retreat in this time period they still hold several systems, including shipyards and manufacturing facilities. So even though in the past TIE fighters didn't have those designs, with the folding wings in the movies, those were some advancements that had developed close to when the battle of Endor took place. The Empire stagnated for awhile but it regained it's footing and became a serious threat for a long time in legends continuity. Not sure if they will do the same thing with the Empire in this series or if they will tie in the sequel trilogy converting them into First Order (gag). I think a lot of us want the sequel trilogy retconned or made into a World between Worlds thing when they introduce Ezra and Thrawn. So far though I've seen tons of legends material they have adapted into this series, and I'm excited for what is next.

Most don't realize that in the Star wars lore, any force sensitive being is born Grey. Able to use both "sides" of the force, the dark and light side or more like philosophies and teachings on how to harness the force easier. But Grey's are still my favorite faction cause they transcended both teachings and gain a higher understanding of the force
If characters were dogs, Quill reminded me of our little Westie dog (Rip) from the very start. SOOoooo I was always quite enthralled to see this character. Him trying to save a baby and being killed for it hit me hard. Really great episode.
