  • Mango kheer is a delightful dessert originating from the Indian subcontinent. It is a variation of the traditional kheer, a creamy rice pudding, infused with the rich flavor of ripe mangoes. The word "kheer" itself is derived from the Sanskrit word "ksheer," meaning milk. Mango kheer is typically served chilled, making it a refreshing dessert, especially during the hot summer months.

    Ingredients Quantity
    Milk 800 ml
    Basmati rice soaked 5 tbsp
    Mango ripped 2 no
    Ghee 1 tbsp
    Assorted nuts chopped 2 tbsp
    Raisins 1 tbsp
    Sugar ½ cup
    Water as required
    Green cardamom powder 1 tsp
    Saffron strands ½ gram
    Method
    1. In a heavy-bottomed kadai, bring the milk to a boil over medium heat. Keep stirring occasionally to prevent it from sticking to the bottom of the kadai.
    2. Drain the soaked rice and add it to the boiling milk. Let it simmer, stirring occasionally, until the rice is cooked.
    3. Using a sharp paring knife, remove the black tip and peel the mangoes. Discard the peel.
    4. Cut off all the flesh around the pit and discard the pit.
    5. Transfer the mango pieces to a blender jar and Blend to make a smooth pulp.
    6. Place a frying pan on medium flame and heat the ghee. Add assorted nuts, raisins and sauté well.
    7. In that frying pan add mango puree, sugar and mix well.
    8. Now add some water in kheer and cook well until the rice is cooked and the milk thickens.
    9. Add green cardamom powder, saffron strands and mix well.
    10. Remove the kheer from heat and let it cool to room temperature for 15 minutes.
    11. Now add mango puree, sauté nuts and mix well.
    12. Transfer the kheer to serving bowls. Garnish with fried chopped nuts and saffron strands.
