I love strawberries but these would be good with blueberries too. Wondering if bamboo flour/fibre would work instead of oat fibre?
@@Clarky1951 Yes these would taste great with blueberries and yes you can substitute the oat fiber with bamboo fiber
Beautiful rolls! I do have a request - if anyone in your family likes peppermint, would you consider trying a peppermint cottage cheese ice cream? My attempt tasted like vodka because I put a tablespoon in to keep it from icing hard. Blech. I guess I'll look into the vegetable glycerin for another try. Also I haven't managed to mask the cottage cheese taste well enough, and I can't abide greek - or any - yogurt. There are no peppermint low carb ice creams on the market, not even at Christmas. There is a mint chocolate one, but I miss the actual pink peppermint one with the little candies in it. Amazon has sugar free peppermints. I think my crushed bits all sank to the bottom because I haven't found them yet. Anyway, throwing that out there for your consideration, thanks!

I've always used 4:3 ratio by weight coconut flour to oat fiber and I'm very picky about oat fiber brands cuz most are very gross. Lifesource is my go to. Modern mountain also very good. NuNaturals DISGUSTING, Naturtonix ok but not white anymore. Used to be white with no aftertaste. Now it's beige with slight aftertaste.
