I really want to make some of this candy at home. Thanks to Steve's tremendous generosity in sharing the recipe, Craig's wonderful videography (is that even a word?), and a little help from Terri on the baking soda quantity, I came up with the "Family-Sized" Hercules Peanut Brittle recipe below. To do so, I researched the weight of 1 cup of each ingredient, calculated the total cups in each Store-Sized Batch (recipe also below), then whittled it down to a manageable size for folks to make in home kitchens. Hope that helps Hercules Home Candy Chefs everywhere! Hercules Peanut Brittle Recipe Family-Sized 1 Cup Corn Syrup 1-1/2 Cup Sugar 1/3 Cup + 1 Tablespoon water 1 Cup Peanuts 1/2 Teaspoon Salt 2-1/2 Teaspoons Baking Soda. This is 26.70% corn syrup, 37.08% sugar, 9.89% water, 24.72% peanuts, 0.25% salt, and 1.36% baking soda.... Explaining the 'why' simply, while you're giving directions, helps people follow them. It's a teaching moment. remember they don't know what you already have done a skazillion times.

This looks so delicious!! When I was a little girl I used to watch my mawmaw and all the church ladies make pecan and peanut brittle for our church. As someone who used to work in the deli at a Sam's Club cooking rotisserie chickens, I have to have a ton of respect not just for the artistry of making the candy, but for the resilience it takes to work around hot, cooking things all day long. That was the most miserable part of my job.
I recommend putting a cut piece of chocolate covered brittle in the front of each bag because it looks super delish. Way more appealing than the dark coating!

My grandma used to make peanut or pecan brittle every year around Christmas. She would pour it on her buttered kitchen counter and we would butter our bare hands and pull it. It is the only thing we ever cooked together I haven't made on my own. Maybe this year I will try to make some with my kids. Thanks for your videos.
Is anyone else just mesmerized by just how big bulk items can get? My gramma when she was alive, was a cook for a boys home then later both jails in our hometown. And when I was little it always fascinated me because what they didn’t get through bulk order, we’d go to the store and buy 20-30 loafs of bread, the 35-40 count flats of eggs, and sometimes milk. And she never had to pay for it because it went on a tab at the store that the county paid each month. All she did was show this paper and into the car it went. So seeing things in such huge quantities even to this day is just amazing.
for 1 batch you need 1 1/2 cup of sugar. 1 cup of the sweet stuff . and one cup of water . I use a cookie sheet to spread mine I line it with non stick tinfoil . I also keep the pan warm in the oven it helps to spread , I also use mesin place to make sure I have everyting ready
Received my order the other day and it was packed perfectly plus I got a gold star. Yeah. I now have a nice size cold pack brick to reuse when I pack a lunch. Candy was awesome. I never like creams in other candy brands but I enjoy Hercules especially the lime.
