    For everyone worrying about all the wasted nuts on the table, worry no more! Jennifer scooped up the nuts and will use those nuts exclusively for the next buttercrunch batch.

      I just fugured it could/ would go into an almond bark or something. Although the massive amount of almonds on the table definitely caught my eye, as it isn't something that is typically seen in your kitchen.

    I think Steve died a little inside when he was told not to scrap the dark sugar from the kettle

      It was burnt it would have ruined the whole thing in fact he already did put some of the burn stuff in because the lady who thought she knew everything went over and started stirring and she didn't scrape the bottom of the pot you cannot let any of that sit on the bottom of the pot it sugar Wilburn. And the whole batch would have been ruined. And the young lady was constantly having to correct the old man who thought he knew everything

      @@jamsaidemelo1367 you wouldn't consider it a light-hearted comment if you had a grandchild or maybe a couple Grand children that had a peanut allergy and an allergy to nuts. It's a health risk it would be like saying I don't care if I put sugar in it and some diabetic eats it thinking that it's sugar free

      Steve strikes me as someone who's always interested in learning a new way to make candy, especially if it's handmade. Not surprised at all that he took such an interest in this!

      He didn't allow himself to be schooled he cross-contaminated the almonds into the chocolate thought he knew better than her also he was going to put the burnt stuff on and didn't like it a bit when she told him not to

    I think we can see one of the reasons for Steve's successes here. He is happy to be lead and taught, even with all his years of experience. So many people will be too stubborn for that in his position. Especially when it's a young person. But he's not like that. I love Steve!

      Do you realize he was being stubborn he cross-contaminated the big pot of chocolate that had melted when he kept sticking his hand in to put more chocolate on everything after being told he was cross contaminating things. I'm sorry but people can die if they're allergic to the nuts that were contaminating the big pot of stuff

      Why do you keep dwelling on the situation and try to start a debate with half of the people who comment something nice about the owners? Move on....you've made your point in multiple comments...we get it he cross contaminated and didn't correct his mistake.     It had not completely registered how neat and clean you all are with candy making until I watched this show. All I kept thinking was OMG what a mess to clean up. You all really are very clean with the way you do things. Even the dirty pots are scrapped down to the metal before they reach the sink.

      But she explained why they didn't scrape the pot. When Steve started to scrape, there was a dark burned spot that would have changed the flavor of the candy. Maybe you missed that.

      scraping the pot doesn't matter for ribbon candy but it does for caramel

    I really don't understand all the negative comments about Jennifer.
    She's a really enthusiast candy maker, and she and the "Hercules family" are talking about their recipes and working methods.
    No wonder she's nervous. I would be too.

      I could be wrong, but It seemed part of her nervousness was she was smitten a bit with Max. She kept looking at him and smiling and gave him the biggest piece of candy to sample.

      Vienna Fray exactly, she was a bit skimpy with the chocolate? i wonder if all their labels has a disclaimer that its make in a facility & equipment that uses nuts 🥜 ?
      because the kettle, paddles, scraper & table all come into contact with the peanuts when making brittle etc?

      It made me angry that he kept sticking his hands with nuts on them into the Big Tub of melted chocolate cross contaminating it. I don't think he realizes how life-threatening it can be if someone who's allergic to any kind of tree nut or peanuts I realize it was almonds... A person can go into anaphylactic shock and die. My granddaughter got something cross-contaminated at Friendly's Ice Cream she's allergic to peanuts. She had to be rushed to the hospital in anaphylactic shock. He needed to keep his nut covered hands out of the big pot of chocolate that would be used for other candies it really made me angry to see how stubborn he was

    I make this at home but I put the almonds (sometimes toasted pecans) in the toffee and I pour it over popcorn!!!!

      candy making is probably a good workout. Standing all day and lifting moderately heavy all day. Just don't eat candy and you'll lose weight. I would guess you burn like 800 calories a day working there, so you can probably eat quite a bit of candy and not gain weight.

    So great to see the whole Hercules Candy family together. I knew there was something coming up after seeing the photo of this yumminess on instagram. This was similar to the way brittle is made but with a huge twist.😉
    Such a lovely person Jennifer and showing her skills in the candy making business. I know I would have loved this as well as a chocoholic and a caramel lover.
    This was an awesome colab and maybe a follow up in the future.

    It makes me sad how critical, so many people are of Jen. It must have been somewhat intimidating for a knowledgeable, yet young, person to teach a 40 + year veteran candy maker, how to make candy. I think she handled herself beautifully!
    In reference to the recipe, did you use "UNsalted Butter"? If so, I didn't catch that.

      I agree. Anybody would be nervous when they're not used to being on camera while working/teaching especially when they realize the trolls of the internet will try to tear them down over stupid untrue BS. This is why we can't have nice things.

      in baking, you always use unsalted butter, because most recipes call for salt being added to it.

    What a brilliant video... Not sure why there are so many negative comments about Jen. The video showed that there are passionate people of many ages that like to make candy and that ya not too old to learn. Mega kudos for such a great collaboration! There was no malice at any point in this video, the only malice I see is right here in the comments section. Stop being so damn picky and grown up!

    My dentist is actually right in front of the best bakery (in my opinion) in my town. So after getting my teeth done I always go over and order some cannolis😂

      Natalie Harrison-Lim I had to get wisdom teeth cut out and my dentist handed me this small cup of Ben & Jerry's ice cream. They blue bell vanilla, blue bell chocolate and vanilla swirl, and Ben and jerry's. I, all doped up on medication, started glaring at the dentist and dental assistant going "yeah I know your games! Trying to give me cavities so you can get me back in the chair! I know what going on here!"

    That woman is really stingy on the chocolate compared to Steve, he normally uses lots of chocolate otherwise there is no point as you won’t taste it! I prefer the normal staff at Hercules Candy they’re top notch! 😊👌

    I like how Steve doesn't lose a drop of chocolate, and squeezes it out of his hand almost like a decorating bag. Very clean and economical - not to mention elegant - workmanship. I'd like to see him put nuts on the chocolate, to see if he's as clean and careful with that, as well. He probably sees money going down the drain with all the chocolate going on the table.

    stuff I know is gonna be all through the comments:
    1. scratching the marble with the cutters/knives
    2. waste of too much nut dumpage
    3. steve redipping into chocolate+nuts for contamination
    4. general nut allergie comments/complaints
    5. we love the fun shenanigans of this troupe!
    I think that the crunch would be stronger with a higher sugar %, so some invert syrup still added, plus the sugar and butter and water. that ratio makes it kind of still too 'soft'.

    We made it differently back in the '60s when I worked summers as a teen in a candy factory. We made the hard candy first like here, then broke it up into smallish pieces. Then dipped them in chocolate then into the almond crunch. One of the best candies there is.

I've been watching your videos for ages, but have never ordered anything cause I have to be careful about that and I know you do make a lot of things with peanuts/peanut butter.

    My girls have eaten butter many times. But it’s my dog that gets me. If you leave butter out at all he will steal it! I caught him with a whole stick still wrapped hanging out his mouth a few weeks ago! It was hilarious

    Mmm..ButterCrunch! One of just many of my favorites. I like Steve’s way of putting all the delicious chocolate over the butter crunch. Oh yes nuts..is it pecans or peanuts? Well it doesn’t matter it looks delicious anyways. Both sides oh my sweetness! This will surely to raise my blood sugar do I care no!😂 I would love to taste this 😋

    This was timely. I am in the process of collecting all the necessary tools and ingredients to make this at home. The video I found called it English Toffee...I think. I asked my daughter what version of it her family might like (almond, pecan, walnut, peanut, dark chocolate, milk chocolate, white chocolate...). She says, “I don’t know. I’m not a big toffee fan.” Humphf.

      Steve is more likely to blend burnt sugar back into the batch, but this is also burnt butter. Leaving it out is probably wiser.

    Oh my gosh.
    I have been watching your videos for over 3 hours but worth every minute .
    Craving each type of candy,you have shown.
    Do you mass produce for retail, or just by order?
    Is there much waste or loss.
    Lots of butter.yum!!
    Does,the cooling table ever get scrapes or cracks.?
    Jen is very efficient, yet almost a perfectionist.
    She is making my mouth water.
    I bet when she works from her business she has precise pieces.

    This looks delicious. Maybe like Almond Roca. Hercules needs to make a 30 pound batch next time. Maybe make the squares smaller so it's easier to flip and not crack as much. YUMMY!!! Calories don't count if the piece is broken. 🤣🤣🤣🤣🤣🤣🤣🤣

      erika they could break up the toffee into manageable size pieces and either hand dip in a pot of chocolate or run thru the enrober then coated with nuts before the chocolate sets.

    Alt Procedure: I'm thinking a roasting pan filled most of the way with the nuts, smaller rectangles of the candy. Cover with chocolate, dredge in the pan, set aside. If dredge is not an option, transfer the candy to a pizza peel, do one side of the nut topping in a pan, set aside, repeat. then do the other side when the melt has set up. You gonna wear out the broom this way.
