- Learn how to make these AMAZINGLY soft & silky wedding-style Paratha/Buss-up Shut Roti! Using my easy-to-follow method & tips, you'll have no problem making the flakiest, softest & most delicious rotis 🙂

With this recipe, you can get 5- 16inch rotis or 10 smaller rotis
Ingredients
DOUGH
✅️ 4 cups of AP flour
✅️ 1/2 cup (8 tbsps) of full cream milk powder
✅️ 2 tsps of salt
✅️ 2 tsps of baking powder
✅️ 2 tsps of brown sugar
✅️ 2 tbsps of ghee for kneading + 1 tbsp for rubbing on top the dough
✅️ 2 1/4 cups of hot water (140F / 60C)
To cook the rotis, you need:
✅️ Oil
✅️ Belna/Rolling Pin
✅️ Tawa/Griddle

TIPS
🌟 Use hot water for kneading (140F/60C).
🌟 Use the best quality ghee, butter or oil (no margarine or shortening).
🌟 Let the tawa or griddle heat completely for 10-15 minutes first before cooking.
🌟 Use a layer of oil, instead of flour for rolling out.
🌟 Refrigerate the dough overnight in a ziploc or airtight container for 8-12 hours.
🌟 Roll out the roti dough while it's cool and NOT room temperature or it will be too soft to handle.
🌟 Wrap in parchment paper and store in a cooler or airtight container to stay soft.

I tried this but I think I used too much hot water as it was difficult to handle..it was also a bit sweet. I will either omit the sugar or cut back the next time. I was amazed how the dough remained so soft to use almost right away. The final result was very yummy and soft 👌👌. My son wanted to know why I was using another recipe as he thinks mine is perfect..but I loved the taste of this one. I used cow brand ghee. Thank you Dearest...❤

This is a brand new method and ingredients to making paratha roti I have ever seen....love it!
Also your tip about using ghee vs margarine is very true. I usually use ghee for Divali paratha and the rest of the time is magazine. Discovered ghee is way better.....makes softer roti 🥰

It's all purpose flour. I've used several brands before and got the same results: Pillsbury, Gold Medal, Peter Pan, Nutrimix Premium, IBIS, Country Pride.
In this video, I'm using Peter Pan all-purpose flour.

Awesome! Usually roti in general will get somewhat firm when cold, because the fat solidifies. Think of butter that's cool vs hot...same concept when you use it in a recipe. Just warm it up and the fat will melt and the dough will get soft again.
