    Our taste buds change as we age, Shinichi. I didn't like okra and nattō when I was younger, now I love them.

    I love Miyoga (the red ginger flower). We call it "Bunga Kantan" in Malay here, and it is also known as Torch Flower Ginger.
    🌷🌿 We used it in our Nasi Ulam ( mixed herbal rice dish) and also use Miyoga in our local rojak salad:)

      Oh interesting. I was wondering whether I could maybe use ginger greens. I might try that. Also, I don’t have shiso this year, so I think maybe basil. I will have to do the eggplant soak. Raw eggplant makes me cough usually.

      @@yeevita Hallo!🙋🏻‍♀️ I have never eaten raw eggplants 🍆(aka brinjals) before. Maybe I should try to eat it raw one day. Am abit apprehensive:)
      Because over here, we usually cook our eggplants. We cook eggplants in oyster sauce with garlic and ginger.
      I wonder how does raw eggplant taste like? 🤔

    ちなみに私は今年は茗荷が手に入らなかったのでだし作りませんでした…orz
    だしも家庭によって色々アレンジがあるみたいですけど、さとしさんは塩昆布なんですね。
    うちは納豆昆布でした 😋

    I love you guys. Thank you so much for explaining the ingredients. I’m an Asian American and only know some of the ingredients by the packaging my Dad used.     Oh, that looks refreshing! I eat a lot of eggplant, but I don't think I've ever eaten it raw. I've never eaten myoga either, but I'm sure I'd like it if it tastes like a cross between onion and ginger. You're always bringing interesting and new (to me) flavor combinations. Thank you! ❤

    I was wondering if Satoshi-san could post the recipe for dashi. Shio konbu is so useful! I recommended this channel to my friend's daughter who is a college student. She wants to learn quick and easy recipes, and she loves Japan!

    I have never known another Japanese person who does not like myoga! So expensive in CA. Fujikko is also good addition in poke instead of usng limu which is hard to find outside of Hawaii.

    Your recipes are amaaazing. This dashi, one minute cabbage and vegetarian gyoza are my favs. I altered a lot of your recipes to make them vegetarian. Like your mom’s kokroke, I omit the ground meat but added chopped cabbage, green onion, carrot and shiitake. So good! Thank you for teaching us!

    Hello, Shinichi and Satoshi!! The dashi recipe looks so good. Thank you for telling us that it is okay to use green onions instead of myoga. I would like to try myoga one day, but it is difficult to find it in the stores where I live. It is so nice of Satoshi to share recipes from Yamagata. I'd love to hear more Yamagata recipes! Thanks to both of you for the video. :-)

    Just made it and it’s amazing! I didn’t find fresh myoga so I used a little bit of regular ginger so it didn’t over power the salad. Also tried it with okra and it gave the nice slime texture. Thank you!🤩

    I went shopping for shio kombu for the one minute cabbage salad :) I have homegrown cucumbers and eggplant and okra I could make this, would like to get the noodles and I just need to pick up perilla leaves Is it ok to use the cucumbers and okra together?

    I'm still in shock now. I've never eaten eggplant raw before. In fact, *usually, if the eggplant is under cooked, my lips & mouth feel itchy.* This salad sounds refreshing -except for that.-

    Is the funny shaped vegetable that you can use green onion instead sort of like a shallot? Shallots are pretty strong they're sort of like a cross between garlic and onion

      If you're referring to 5:20, that's Myoga. It's the flower bud from Ginger.

    The eggplants sold in Europe can't be eaten raw also they are much bigger than the one in the video.
    Is that an Asian kind of eggplant? 🤔
    What does miyagi taste like? Is it that different from "normal" ginger?

      Hmmm....good question...I’m not really sure. We usually don’t eat eggplant raw here, so this is a unique dish. Myoga is very different from regular ginger. It has a totally different taste and flavor

      You can eat raw eggplants. You would need to eat dozens of eggplants to get sick from the nasty chemical in eggplants.
