  • This Japanese Spinach Salad applies a simple method called the Ohitashi to infuse vegetables with umami and subtle flavor. It’s one of the common techniques Japanese use to prepare vegetable dishes. This recipe is vegan-friendly!

    INGREDIENTS
    1 bunch spinach
    Pinch salt (kosher or sea salt; use half if using table salt)
    Kombu Dashi (You can also use "Awase Dashi" (a combination of kombu + katsuobushi)
    ½ cup water
    1 kombu (dried kelp) (5 g, about 2"x 2")
    Seasonings -
    1 Tbsp mirin
    1 Tbsp usukuchi (light-color) soy sauce
    Toppings -
    white sesame seeds (roasted/toasted) (for vegan/vegetarian)
    katsuobushi (dried bonito flakes) (for non-vegan/vegetarian)

      Hahahahahaha! We film clip by clip, so after whisking, we stop recording. Therefore I can't jump to the next step until Mr. JOC change the angle of the camera... which takes HOURS to film this simple recipe.... I won't be so slow in my real life. LOL.

    This recipe is vegan friendly as long as you omit the bonito flakes, as they are made of dried fish. I am vegan and I am very excited to try this dish! I might make it wtith dinner tonight. Thank you for the recipe!

    Don't u just hate it that today's fresh bunch spinach comes with the roots cut off. Back in the day they would pull the whole plant out as opposed today. Now when it harvested they cut it at the stem & leave the root in the soil for a 2nd crop. Meanwhile u have to pick out 1 leaf at a time after the ice bath. Ogoto, ne. (tedious). Plus we eat the very bottom of the stem & the pink part of the root. It's sweet.
    I like spinach but it's a pain to make nihon-jin style. But I still do.

      Just One Cookbook thanks, Nami san. I don’t think it would last more than 24 hrs in my house. My whole family loves horenso. If i were to make this dish, i would have to make double so everyone got his/her share of the side dish. Horenso gomaae also disappear very quickly.

      You can make mirin:
      5 tablespoons (65g) sugar
      1/2 cup (120 ml) sake
      Bring to boil over medium heat and ensure the sugar has dissolved.

      You can substitute mirin with sake and sugar, although it won’t be exactly the same. The ratio of sake and sugar is 3 to 1. For example, mix ¾ cup (or 1 Tbsp) good quality drinking sake with ¼ cup (or 1 tsp) granulated sugar. More about mirin here: www.justonecookbook.com/mirin/
