Your use of a painting pole inside of a PVC pipe is genius!! I wish I could time travel to make a staff I made a few years ago with this trick; it would actually be portable. :)
It is a milestone to be able to celebrate your birthday in 2020. I am surprised that those short lengths of pipe would flex much, especially with the amount of builders pole in them. I would hesitate to put foam in there due to the heat and fear of splitting a thin walled pipe. The rings I would carve just with a detail file, not a dremel- pvc is nice and soft. I understand that it can be harder to film, but please bolt down your sander. It even comes with pre drilled holes for that purpose. or atleast clamp it down. The finished spear looks like it came straight of the set, well done.
You joke about making the pole collapsible not being exciting, but I love to see a nice clean interface like that. And I wouldn't have thought to secure it with tacks, my head was stuck on adhesives, for some reason
You should drill a tiny hole somewhere in the shaft before trying to put the second coupler insert in. The reason you had such a hard time was because you were pushing against the air in the pipe. The air needs an escape.

I actually thought about it. just a carriage bolt would work. I didn't out of fear of cracking tiles at cons!
