Today, I will introduce you how to make a very delicious glutinous rice crumble pie.
I really like the combination of glutinous rice pie and crispy crumble~~♥
It is good to bake only the glutinous rice dough thinly to give it a crispy texture, but
I put a cookie dough under the thick glutinous rice dough and a crumble on top.
Thanks to this, both the top and the bottom are crispy, while the middle is chewy.
Really delicious glutinous rice crumble pie that is great for the whole family to enjoy together!

▶Ingredients
★Mold size Ø 18cm★
[Glutinous rice dough]
270g Milk
200g Glutinous rice flour
80g Green peas
70g Half-dried figs
50g Walnuts
25g Sugar
2g Baking powder
1g Salt
Glutinous rice powder was used as dry glutinous rice powder.
[Bottom dough]
40g Unsalted butter
110g Digestive
[Crumble]
50g Unsalted butter
50g Almond powder
50g Cake flour
45g Sugar
1g Salt
▶How to make
1. Cut the Daise cookies by hand and mix them with butter.
2. Spread the daise cookies on the bottom of the cake mold and press well.
3. Put all the crumb ingredients in a bowl and crush them by hand.
4. Refrigerate the finished crumbs until use.
5. Add sugar and salt to the milk and mix lightly.
6. Add glutinous rice flour, peas, walnuts and figs and mix.
7. After filling all the dough into the cake mold, add enough crumble.
8. Bake in a preheated oven at 180°C (356°F) for 50 minutes.
