土は白粘土なら大丈夫です。
ちなみに信楽特白という粘土を使っています。

ターコイズは銅が入っていて食器に向かないと聞きました

海外の人からは銅やマンガン系は食器に向かないとの指摘をいただきます。
日本では指摘もなく規制もないです。
そうなると、あとは自分で毒性を調べて考えて、使うのか排除するのかを決めていかねばなりません。
あまり適当な事を書くのは控えたいと思いますが、何でも過ぎれば毒になるし、微量でも危険な物質もありますね。
ちなみに、オリベ釉も銅。
青はコバルト。茶色は鉄。黒はマンガン。
どれも直接体内に入れたら良くなさそうですね。
明確なお返事ではありませんが検討してみてくださいませ〜
