Chicken Pho | Pho Ga | Vietnamese Chicken Noodle Soup

RECIPE:
1 whole chicken (5-6 pounds) or 5 chicken thighs
4 quarts water
1 yellow onion
Chunk of ginger (approx 2 oz)
2 shallots
2 sticks cinnamon
5-6 star anise
1.5 Tbsp coriander
2 tsp black peppercorn
3-4 cardamom seeds
1 1” piece of yellow rock sugar
2 tsp salt
3 Tbsp fish sauce
1 Tbsp chicken bouillon
Vietnamese meatballs (optional)
Pho noodles
Garnishes:
Red chili peppers (optional)
Lime
Jalapeños
Cilantro
Scallion
Thinly sliced onions
Bean sprouts
Thai basil
Hoison sauce
Sriracha
