It always helps when you say what kind of "chili peppers" you use in a chili pepper recipe.

Any chili peppers work really. Here I'm using I believe a variety of the Thai chili, also known as bird's eye chilies.

Are those white thai peppers? I'm growing some and hope it grows like yours! Thanks for the recipe, but you should only use plastic containers for dry ingredients. For something that uses wet ingredients and especially if it's something that's hot or warm initially, I'd use glass. Plastic leaches stuff into your food over time.

I have no idea! I would like to know too! Yep, I'm with you on the plastic containers but I worked with what I had at the time 😉

Do you pour the vinegar while its hot? or cool it down

While it's hot.. so it blanches the chilies bright red. Make sure to use a heatproof jar or it will crack and shatter... while you cry and mop up the sticky mess because you also failed to pour it over the sink 😉
