I just cooked this today and it came out perfectly. Very soft with baking soda, and so much flavor. The only issue I have is that the top turned a black greenish color, when I covered it and left in oven. I am not sure why the color change? It still taste amazing. I have cooked this twice before, the first time it was not edible it was like tiny rocks and I cooked for almost 6 hours. Than I realized you have to soak dried ukwa overnight the second time i cooked it. The 2nd time it was edible, but it was still not soft enough and not sweet and seasoned really well. This 3rd time is the charm.only issue us color change mentioned earlier. Very expensive but worth every dime. As a matter of fact, you will not enjoy this wonderful meal, if it is not prepared well.I eas introduced to this a few years back and ever since I have been hooked.
This dish takes long o but I bet it's worth it. I also cook beans with pressure pot and my husband doesn't eat porridge beans😁 so I do take his own out before adding oil and pepper. I enjoyed watching this.

Any occasion I attended and there's either ukwa or abacha, I would honestly go for the two or one and forget rice and swallow. It's a expensive meal. I enjoy both porridge and white. 8 never knew one can add ogiri in ukwa wulayi!
