- We make this delicious dessert using the key limes we bought at the Latino market last week. We are thrilled to have discovered a local source for key limes.

Coconut milk is much less expensive than coconut cream. In storage, the cream separates from the thinner liquid. Pour off the liquid part and--eh, voila!--coconut cream. Use the nutritious liquid for smoothies, Thai iced tea, etc.

Just shake the can well before opening and it will be good, no wasting the coconut liquid
In order to get as much goodness from the limes as possible, I zest the skin first, then squeeze them. My squeezer is like yours, and without the skin they do juice a little easier. I keep the lime zest in a small, airtight container in the freezer.
This is genius! You can also dry the zest.
hi Pam...just a reminder that we can freeze citrus fruit whole....even frozen you can pull out a lime (in this case), zest and put back for juicing (while still frozen). Once you are ready to juice, just thaw and since the fruit was previousy frozen all the little juice cells froze and exploded so juicing is so very easy. I would highly suggest just popping them in the freezer, as is ,for future use. You'll be able to zest and you'll get out more juice. Give it a try and see. I have a video on this very topic. right now I have key limes, regular limes and large lemon's in the freezer....I've done oranges and grapefruit too. My husband is a lime fanatic, i see these cheese cake bars in my future. :)

Key lime everything! Lol As a 7th generation Floridian, I can say I have never bought a key lime in north central FL in my 58 years. They are more south Florida. We buy lime juice instead, we use a lime for grated garnish.
When my son was in the Marines he was sent to linguistic school in Monterey, CA, I sent him homemade key lime cookies, he opened the bag in class and said no one there had ever tasted key lime, bag was demolished in minutes! 😅
Try microwaving the lime for a few seconds to help release the juice or roll the lime on the counter for the same purpose
I love to make cheesecake. My favorite is plain (New York Cheesecake), sometimes with cherry pie filling or caramel sauce drizzled over it. I also make a delicious triple chocolate one. A little bit goes a long way.
I like the way you garnished them. Having them frozen for your road trips is perfect. Between them and a few slices of pound cake, you have travel desserts ready!

If you can’t find fresh key limes, a good alternative is bottled Nellie & Joe’s key lime juice - it has the best key lime pie recipe on the label - we freeze it and thaw slightly before serving.

That's what I use.
I have a manual, heavy duty, metal hinge/press style fruit juicer for oranges, lemons, grapes, pomegranates, etc. The ones I found on Amazon are hand held and look like an over-sized garlic press. Mine is a table model, which I prefer, because it is easier to leverage my efforts.

Fyi, if you have one of those orange juice/citrus juicers that plug-in and spin really fast. Those are really great for the key limes using the smaller sized attachment.
Looks delicious! I use antique glass reamers in two sizes for all my citrus juicing.
That’s what I use too. It works wonderfully and I like anything antique! 😊

Hi pam and Jim, rool your limes under the palm od your hand, u then put the limes in the microwave for a few seconds (30 - 60 seconds), they will juice so much easier.

What a great use of the garlic press! I love key limes and run into the same issue with my regular citrus juicer, so I think you for the tip! I don't comment very often but I do love your videos. I especially love the intro jingle you use! Every time I start one of your videos my shoulders start moving and my feet start tapping! (could that be considered exercise?)😃

I use olive oil for the crust since i cant any fat that sets back up after it cools.

I'm confused, parchment paper is non stick so why does it need to be sprayed with oil?

I am not a fan of cream cheese either. I use key limes in making a key lime pie which is delicious and delightful. I could tell you were not that impressed with the cream cheese- lol

I’m on a diet, so I didn’t watch this. I have key lime juice in the fridge and I knew I would make it. I started my weight loss journey because of Pam (she shared her weight loss chart) and I have lost 85lbs. I have 15 more to go to goal weight and am determined. Commenting and liking for the algorithm but not watching. LOL.
