- We use blue corn tortillas to make cheese enchiladas slathered in green chili sauce. So good! the tortillas and sauce came from the Latino market we visited recently. This is a meal that can be used for our Level 1 Food Storage Plan.

I LOVE your tip about heating the tortillas in a sheet pan with oil! I always hated standing at the stove, heating them one by one.
I found that enchilada sauce and I’m gonna look for it. It has a clean ingredients list and does not have any unusual additives. It is called El Mexicano green enchiladas sauce (Salsa para Enchiladas).

I’m drooling! In her Mexican kitchen, my mother would make cheese enchiladas with boiled (or canned) cubed potato. Delicious
A very good dinner to say the least! I would suggest very lightly basting the bottom of your pan with the enchilada sauce, then only pour a small amount on the top, just to give you the flavor and not burn the top of your corn tortillas...it will keep them from getting soggy and will hold together easier when scooping them out. I always have extra sauce on the side if anyone wants it.
Here to say the same. I think that adding less sauce keeps the tortillas together better and more sauce can always be added to the side if anyone wants it. I know you were trying to keep it simple, but often adding a protein (chicken, beef, pork, beans etc) to the cheese on the inside helps to keep the structure of the enchilada rolls and there is less collapse from the melted cheese.

Green tomatoes, water, onions, chili peppers salt, cilantro spices and garlic. I looked online and they have it written in English. Also stating this can be purchased at Wal Mart.

You can thicken the canned sauce up with a little cornstarch or flour slurry. Heat sauce in sauce pan and when hot add slurry until thick as you prefer. I lived for 20 years in a small town just over the mountains from El Paso. Learned so much about Mexican cooking. LOVE IT.

Oh my! What an easy enchilada supper! Pam, you made it look so quick and easy. I usually do the frying thing with the tortillas. Your way is so much better!! Thank you for that tip. I'll be looking for the same brand enchilada sauce. Those blue tortillas are so pretty. Yum!

Cook longer til a little browned, AND LET COOL AND SET A FEW MINUTES before trying to serve. Think lasagna!
I would add some chopped onion inside each rolled tortilla for taste and texture.

I made some Chicken Tamales with blue corn one year to go with our usual big batch of pork tamales. After steaming they looked more grey blue..not real appetitzing to look at but they tasted amazing lol.

Cheese enchiladas are a favorite with us. Instead of rolling the tortillas, I coat the bottom of the baking pan with sauce, then add a layer of tortillas flat and torn to fit the size and shape of the pan. Cover with the shredded cheese and chopped onions. Top with more sauce and repeat the layer, ending with the cheese and onions. Cover with foil and bake at 350 until cheese is melted and done to your preferences. Serve with your favorite toppings.

This is such a great video, especially for someone like me who has never even attempted to make enchiladas of any kind. I had no idea how to even start, and I certainly did not know about warming up the tortillas first before working with them. This is now on my list of recipes to try as soon as possible. If I'm successful, this will be another great meal to add to my food storage. I love enchiladas - they are my very favorite!! Again, another great video in so many ways.

You may look for Blue Cornmeal the next time you are at the Latino market. It makes beautiful cornbread, and it does taste sweeter than the yellow or white cornmeal.

I've never used the blue corn tortillas. They did get a little soft BUT I'll bet they are delicious!!!

I know it's hard to wait when it smells so good, but I've found if I let the cheese have a few minutes to set up, removing the enchiladas from the dish is much easier. I also make my own sauce, but I definitely want to try that brand. We have a huge Mexican supermarcado near us and I've been meaning to go shopping there, so now I will. I want to get some prepared masa for tortillas also! I once made the sweet tamales for Christmas starting with masa harina. The smallest bag I could find had a recipe for 5 dozen, so I had tamales in my freezer for months!

I made up a batch of chicken enchiladas and froze them single layer then transfered to ziploc bag for freezer storage. They can be used a number of ways but I did them in the air fryer and served with salsa, sour cream etc. Easy peasy.

A Mexican friend of mine would just put hers in a plastic bag and microwave them just until they were pliable. Saves calories from the oil.
I love Raley's store brand green enchilada sauce. I think it tastes better than La Victoria or El Pato. Raley's is a local grocery chain in Central California.
Cheese tamales have a chile in them- I bet cheese enchiladas would be good that way, too. Doesn't have to be jalapeños, you could use Anaheims or poblanos if you like a milder but flavorful chile.

Too much sauce on the bottom! What you made is called Enchilada Casserole!
Pam: Is your red tray made of Melamine? If so you should probably not use it for heated applications as the Melamine can leach into the food. Melamine can cause kidney failure when consumed. It has a habit of leaching into your food slowly over time when heated also you should not cut food on it. If Melamine is only used for cold food it is ok. I have eliminated it from use in my kitchen. Boy those enchiladas do look good. I'm not sure I would share them. I can hear Wallace in the background saying Cheese, but where is Grommet? You two bring a smile to my face every time I watch your videos.
