- Chicken tempura is a regional specialty in Japan. This Chicken Tempura is with a crispy and fluffy batter on the surface and juicy and tender meat inside.
Ingredients for crispy chicken tempura recipe
Chicken - 300 gms
Soy Sauce - 1 tbsp
Pepper Powder - 1 tbsp
Salt - 1 tbsp
All Purpose Flour - 1 cup
Cornstarch - 1/4 cup
Baking Powder - 1/4 tsp
Egg Whites - 2
Ice Cubes - 5
Water
Method to make fried tempura chicken
1. Marinate the chicken with soy sauce, Pepper powder, salt.
2. Dust the chicken pieces with corn starch and flour before dipping them in the tempura batter. This will make the chicken more crispy and aid in the batter sticking to the bird.
3. Then make a batter with all other ingredients and dip each chicken pieces and fry it in oil.

So I have a question I just made the recipe to your exact specifications and for some reason my chicken is not is not crispy at all the batter is still like dough after cooking I put the batter on thin. I started in 350° oil any idea why ? Thanks
Yes, 350° is fine. you can fry little more or double fry it.
How can I store/reheat leftovers? I made way too much 😬
Store it in refrigerator upto 2 days and to reheat microwave it for 5 minutes or fry again in oil to make crispy.
