Bilkul niklega. Aap bas dough par mehnat karo, raat bhar cover kar ke fridge me rakho, subah process shuru karo. Isse jyada yield niklega. Koi dikkat ho toh message kar dena. Atta, maida, sooji, teeno se chaap ban jata hai. Filhaal mai chaap se aage badh kar chicken wagehra bana raha hu flours se.

Can we use wheat flour(Atta) instead of Flour(Maid)?
Yes you can use but there is less gluten in whole wheat flour....no matter what you use wheat flour or maida the final product you get will be same...

You have to check which brand of atta has more gluten in it. I brought a big pack of regular atta from mall with a warning of gluten content in their product. When i extracted the gluten, the ball weighed 345gm. Since atta gluten is coarse and dark compared to smooth and white gluten of maida, i had to add a bit of maida, say 50-70gms. It improved the elasticity and taste of chaap.
With 2 years of regular experience, i would suggest never make chaap only with atta meant for roti and paratha. You will regret later. Mix 50:50 atta to maida and then proceed or mix upto 20% maida by weight after thoroughly washing the atta gluten. Add little by little of maida and work up the gluten. Rest for 30 minutes and again work up for 10 minutes. If you are adding soya flour, do it immediately after rinsing the gluten.
The more you knead, your chaap will be more tasty and with meaty texture. No store bought chaap can compete with it.
@@recipekipotli wheat has 20-30gm less gluten per kg of flour. You can improve it by adding little bit of maida. Pure atta chaap doesnt have good feeling though good for health.

Haa, chakki aata brand se chaap ban jata hai. Yield lagbhag same ya thoda kam niklega lekin chaap hard banta hai aur aate ki smell aati hai.
Ashirvaad aate se kabhi mat banana, uss me gluten bilkul nhi hota. Maida hi suitable hai chaap ke liye.

Starch se ek Tibetan dish banti hai...jiska naam hai Laphing...uski recipe bhi aayegi kuch time baad....

Chaap bilkul safed ya clean nikalta hai. Badboo bilkul nhi hoti.

Vinegar se chaap bilkul clean safed banega aur jaldi kharaab nhi hoga. Aap iske bina bhi bana sakte ho. 24 ghanta freezer me rakhna jaruri hai taaki texture develop ho. Phir iski sabji banane se pehle garm paani me duba kar ready karna hota hai. Deep freezer me maheene bhar kharaab nhi hota.

Taste aata hai masaledar gravy se. Agar meaty texture chahiye toh poora maida se hi banega. Dusre material se banaoge toh besan ka gatta jaisa feel aayega. Maine market ka bahut saara chaap ka variety try kiya lekin ghar ka banaya hua chaap hygenic aur better material quality ka hota hai. Soya daalne se texture aur taste bilkul badal jata hai. Market me sasta production karne ke chakkar me chemical aur jyada matra me starch rakha jata hai warna 80 rupay kilo me kaise mil sakta hai? 120 rs kilo me chawal ka powder mila. Achhe brand ka loge toh 300 ya usse adhik ka milega.
