      People in town have asked him about it and from what I've heard he's always said something to the effect of it's too much of a headache which is true. Real bbq takes too much time and work compared to the profit

    That's pretty close to an authentic marinade, I would just suggest the addition of some minced white onions and some minced cilantro. The cilantro really sets it off.

      It's awesome. My ol man smoked and grilled all the time. Now I'm the same way. If my meat isn't smoked or grilled I won't eat. It kinda ruins you.

    I grew up in So. Cal and have visited many places for carne asada. Even bought the marinated skirt steak from Vallartas, but never have I ever seen it that thick.

    Malcolm,a little tip,an easy and quick way to clean the grill grates before a cook,take half a medium size onion,and rub the grates with it,it cleans the greats faster than any cleaner ive ever used in the past

      He's a great chef though, it's just that he would do good with some exercising and swapping the meat for a salad or two every now and then.

    Looks good.ALWAYS use MESQUITE lump or briquette charcoal for carne asada,polllo asado,fajitas.That's what we use in the southwest and in northern Mexico for grilling

    Just made this last night, gotta love the webber for simple grilling. I've always used lime, but the orange and vinegar. I'm gonna have to give that a try. Stay safe brother.

    Malcom, my family said the is one of the best steaks I’ve ever made. I owe that to you. This was fantastic. I even had some leftover from 2 huge flank steaks and made some steak and eggs the next day.

    Beautiful! Looks great! As a white boy myself, I absolutely love cooking and eating Mexican food!
    But you will never see medium-rare beef at Mexican restaurants or taco trucks. They cook it well-done, every time....and missing out on so much flavor!

    I've recently been taking my marinade to a new level. I vacuum seal the meat with the marinade. Then I freeze it. Thaw when I am ready to cook it. Let it get to room temperature then grill. It's a game changer, seriously.

    Only thing I would do different, the Weber is designed to be closed for cooking. I get more flavor cooking with it covered. Med rare with Royal Oak natural lump is 3 min per side. I have never used the charcoal Malcom used in this video.

      Maybe heat it up first to make sure and kill any bacteria left behind from the raw beef.

      Make extra marinade, don't use the same leftover marinade the raw meat was sitting in.

      You could. The heat will kill off any bacteria. I do it all the time no one has ever gotten sick

      It’ll probably get mushy because of the water in it. You would wanna Sauteé the veggies as dry as possible with some nice seasoning, oil and Sauteé hot and fast so they caramelize a little and remain crunchy
