I made these sub rolls yesterday and they absolutely are the best 100% whole-wheat bread I've ever made. I've been making bread for at least 40 years, and thought I was sort of an expert, but I learned a thing or two here. I always thought whole-wheat breads had to be kneaded aggressively to come out right, but I just stretched the dough as shown in the video and it came out so much better than I've ever made before.
Oh yum… the Philly Cheasesteak sandwich is going to be absolutely delicious using these buns! I’ve been making no knead bread for several years now. It took a bit of getting used to the loose texture of high hydration doughs, but the flavour of slow rise dough was well worth the learning curve. My daughter isn’t all that much a fan of bread… unless she smells me baking some! When it.s fresh out of the oven I almost have to guard it or it’s gone. 😂 Thanks for giving me the idea to bake again. For anyone with back problems and no stand mixer: no knead bread can be your way to hole baked bread without the strain to your back! Can’t wait for that Philly Cheasesteak video!

Is there a benefit to the stretch and fold method or will it come out just as good kneading?
Using stretch and fold allows a higher water content and will make for a lighter dough and higher rise.
Great video! Is there a substitute that can be used for wheat and a substitute for Gluten?
Are you trying to make gluten free bread? That is a whole different thing. We don't currently have any GF bread in the channel sorry.

I ain’t got time to waste almost an hour waiting 10 minutes three or four different times. Is there any quicker way to do this?
Knead it if you prefer. The texture may come out different. Good bread takes time.
