Liked Boars Head products. I knew Buddig was some of the most processed deli meats. Also liked Dietz & Watson. Never cared for Eckrich. Grew up on Oscar Meyer's. The quality has went down over the years. Used to like Sara Lee. Not anymore. This makes me want to give up on deli meats.

I seem to get away with a little sodium nitrite if I take a teaspoon of apple cider vinegar after and I don't eat too much or I rinse or simmer out some of the toxics before eating. Sodium erythorbate on the other hand, is really a brutal pain cause for me: inflammatory arthritis. I now consider all the fat on fresh pork shoulder precious, and I salt, chop small, and slowly render out the bits. I save the lard in a jar and put it in the refrigerator. The bits get a jar in the freezer. I add them to foods I cook like you would bacon. I never buy whole or part turkey with sodium phosphate a chemical they still inject into most frozen turkeys . . . but not all!
