I can weigh in more about whether or not you can just "shit on your farm" lol I took an urban farming class at my university and the professor, at his own farm, used a paper bag and saw dust in the outhouse as an means of collecting "human fertilizer." you "go" and then scoop sawdust to soak up fluid and neutralize odor. he wasn't able to get organic certified, it was something about human excriments not being organic itself, but practiced other organic farming methods otherwise. it may sound gross but it was totally safe. The difference between what they were making at the farm and just shitting in a field is that the process of making compost also involves a large pile of nutritous food scraps, dead plants, and some animal wastes, and the good microbes break those down to make more good nutrients. Also, most importantly, heating the compost pile and slowly turning it for a longer period is done to kill pathogens.
