I have never understood why people from any given country make negative comments regarding another country womans/men's recipe. Each family has their own unique way of making a dish and each area, state, or region of a country has subtle differences. No need for negative dialog!

In my country we have so many different versions of recipes because of all the different regions that make up the country and each one is special. The only version I would not accept is the “Americanized” version of an international dish because that’s when it changes so much and usually becomes unhealthy and completely different from what it should taste like :)
Would it be best to squeeze the spinach in a cloth/towel to get as much liquid out as possible or is just letting it drain enough? I can’t wait to try this!
If I’m in a hurry and I don’t have time to let it drain then yes, squeezing it is great. I try to get as much moisture out as possible but tbh I’ve also cooked it from a frozen block!
It's so funny about the fresh VS frozen debate, my Afghan coworkers will not use fresh spinach when making this, we've had fresh spinach in the fridge and it just rotted away, but the bulk of our frozen spinach bags don't last a week because they'll make this dish using them. I need to get their recipe because it looks like they do it very similarly as you did here.

adding spinach and mustard greens together is a pretty common way of making it in india. its called sarson ki saag.
