Raisins 50g / 1/3cup
Dried Apricot 50g / 1/3cup
Red & green cherries 50g / 1/3cup
Rum (or juice of choie) 100ml+-
Unsalted butter 90g / 8Tbsp
Sugar 70g / 1/3cup
Whole egg 2(55g+- per egg)
Sea salt 1.5g / 1/4tsp
Cake flour 150g / 1cup+1Tbsp
Baking powder 1.5 / 1/2tsp
Fresh milk 40ml
Vanilla extract 1/2tsp
Orange zest 1tsp
Pan size 21x6x8cm
Bake at 180°C / 350°F for 40-50 minutes

I just did it and it's taste so moist, i add water and rum to the dry fruit because the rum was too strong, and it's turn out perfect, thank you for your recipe.
Can I know much water you add?
I made 2 batches of this in one night (one with alcohol and the other with orange juice), I also used cranberries instead of cherries, and let’s just say they were both a HUGE success! Everyone loved it, and my dad even asked when will I bake it again XD One amazing thing I noticed is that the cake seems to taste better and become more moist the longer I keep it, which is just fantastic! No need to worry about the cake going dry. Thank you so much, Apron, for this wonderful recipe. I wish you a Blessed Christmas and a Happy New Year!
Hi! May I ask whether the cake is the soft fluffy type or the condensed type like pound cake? And when you keep do you keep in fridge?
@@YokeMeiNg Hi, you don't need to store it in fridge, unless it's very hot where you live. Also, the recipe shown in the video, will render a pound cake like texture. Dense and fine crumb, unlike sponge cake. Hope this helps:)

@@thamciak Hi sure you can. I have tried plum cake with less sugar, try to balance with caster sugar and honey or some other syrup.

I made it today and it was successful and delicious! Thanks for the recipe!! I reduced the sugar to 50g as i was afraid the mixed fruits soaked overnight in apple juice were already quite sweet. The sweetness was just nice and not overly sweet. As my oven is quite small only 18L i baked it at 150°C Top and Bottom Heat for 45mins.

Hi, can increase the aroma of the cake and extend the preservation time of the cake
Add flour to prevent fruits from sinking to the bottom of the cake.

Hi Apron, may I know if I can use those mix fruits packet (abit wet, seems got some syrups) which I bought from baking supplies for this cake? If yes, can I skip the rum, straight away pour those mix fruit coat in flour and then mix into the batter to bake?

Hi I have made 4 portions and the creamed butter batter curdled when reached the 6th egg although I have observed all necessary steps to add each egg slowly after it is well incorporated. May I clarify : (1) what could possibly gone wrong? (2) just thinking aloud if I were to whisk all the 8 eggs (whole) separately till light and then add them into the creamed butter instead, base on your baking experience will this achieved the same final product as yours ? (3) I have tried many ways to prevent curdling even by cooling the bowl with ice packs during addition of eggs , do you think this will work too? Hope to hear from you. Thanksx3 !
Hey! Curdling is totally fine here, that won't make any differences on the final result. But if that bothers you, you can measure the sugar then blend it into powder sugar and add those on the butter instead of granulated sugar. That will stop curdling. Hope this helps you. Thank you ❤️
Whisk the eggs separately not till they are white buy till yolk and white is incorporated, then add to butter sugar creme, it prevents curdling and results in better moist cakea

Thank you for this recipe. I followed it as close as possible. Used wheat flour as I couldn't find cake flour. It tasted good! However it did not raise up as high as the one in your video. Do I need to increase the oven heat or add more baking powder?
