I really enjoyed the Amsterdam Marathon (it was my first). I agree with a lot of what you've said, loved the great support from the locals but the third quarter of the race route was a bit lackluster. I thought the orange corral at the start was a bit of a mess though - there were far too many people in that zone and I was in a massive queue outside where they directed us into and out of the stand onto the track. Eventually, after the gun, they sent a bunch of us through a different entrance and we had to leg it through two slower corrals to get back into orange. Just made it, but was out of position for the pacers I wanted. I'll make sure I'm inside earlier if I do it again and probably take the main entrance. Didn't realise there were quite a few toilets inside, they were a bit coy about that in the brochure. You're not wrong about those ramps though. I'm sure it's still up there with some of the flattest courses but I vividly remember the one you mentioned.
Can't find any time details. I assume it may be midnight CET, but don't worry it takes a few months to sell out. Good luck, hope you get it & have a fantastic weekend next year. Don't forget to book a hotel sooner rather than later, it's cheaper out by the airport. 397 bus takes you straight to the Olympic Stadium
Hotels well that's down to what you look for in a hotel. We paid £160 for Friday to Monday at IBIS Budget Hotel at the airport, 10 minutes by bus to the Olympic stadium or 20 minutes into the city centre. When I looked City Centre hotels where from about £450 for the 3 nights.
