Defoliation is a technique used in Bonsai to improve the ramifications/branching of a tree. This also reduces the size of the new leaves. Defoliation also allows access and a better view of the branch structures for improvement.
Defoliation can be done totally or partially. In total defoliation, all of the leaves are removed along with all or most terminal/apical buds. It is important to remember to trim apical buds because this disrupts the flow of auxin, a hormone that suppresses lateral budding. With the terminal buds removed, new shoots can grow lower down the branch at the nodes. Dormant buds may also grow from any woody part of the tree.
When trimming the foliage, leave the Leaf stalks/petioles. Over time, the petioles will fall off. Cutting too low or ripping the leaves off can potentially damage the nodes preventing new buds from forming.
Defoliation should only be done on a healthy tree. defoliation done on a struggling tree may lead to deteriorating health and possibly complete decline of the tree. Different tree species have different times of the year in which defoliation should be done. For most tropical and ficus, it can be done any time during active growing season.

Rubber tree(Ficus elastica) is usually not an ideal species for bonsai. It got funky growth habit, trunk that grows like a cylinder tube, enormous leaves. Though they are used as larger bonsai in a lot of the SE Asian countries. I use a dwarf cultivar so the leaves are smaller than normal ones though still pretty large. This is a 2 years progress. My goal is to see if I can furthet reduce leave sizes as well as growing aerial roots from lower branches.

Ive been inspired by watching your videos! I just picked up a rubber plant last week and finally found a pot today for it. Any suggestions on bosai soil i should use for it? I would have to go to lowes or Walmart and mix stuff to make what i need
Amazon is a pretty good place to buy bonsai soil. 'The Bonsai Supply' sells a quality product.
I am happy to hear you enjoyed and are inspired by my videos. Where I live, the tropical species I mostly work with, and life demands, most of my trees are actually just pot in mostly organic soil-borderline on regular potting soil. I don't talk about soil a lot because it will all depends on a lot of factors, including your climate

Beautiful plant. The leaves are huge... do they get smaller over time? Does it accept cold weather? Do the roots become airborne easily?
This cultivar can reduce quite well. They are tropical and will need to be kept warm above freezing. They do produce aerial roots in the right condition but not as easily as some other ficus species
Very interesting, I never knew F. elasticas could make such small leaves for bonsai. Wow you have so many trees, I just subscribed!
I do have a F. elastica 'Burgundy' like yours and I'm thinking of trying is as bonsai eventually.
I have a question about the 'Burgundy' variety. Have you ever had a mutated 'Sport' growth appear on a branch? I'm asking this because I pruned mine a couple months ago to propagate it and the mother plant opened a new leaf towards the top and it looks different than the rest. It is green with red spots all over the leaf and really doesn't have the 'burgundy' coloration anywhere. Anyway just thought I'd ask in case you've experienced any.

Thank you. I acquired it pretty much as young seedling and been training it for almost three years.
Oooh soo you trim the leaf off just in front of the stock so you don’t have to worry about the rubber juice? My rubber plant is 2.5 feet tall and I wanna bonsai her but am trying to focus on survival of winter in Ohio first

There are several reasons. Here, it is both to encourage ramifications and reduce foliage size

Defoliation can be done at anytime the tree is vigorous and actively growing. I usually defoliate my ficus trees in spring or late summer/early fall

How many years to get the leafs that small? Edit : nevermind seen in you newest on this it was a mini leafed variation
Yes. It is a dwarf cultivar. Though leaf do normally still get very big. Up to 10-15cm in length.
