Cooking terms are basically just french vocabulary. Centuries of codifying how they cook will do that. Just like music where most terms are in Italian
Link was partially right on the term mother... direct reference its the term Panera uses (or used to) call their sourdough starter "Mother" that they continuously usen(used) in all their sourdough products
It’s not just Panera that does that. Most seem to that I’ve heard.

'Mother' is a starter or scoby-like thing, like they said.
"Mother sauces" are the five core sauces in French cooking that all other sauces are derived from. This _only_ applies to French or French-related cooking. No other cuisine uses it.
Vittles is a term for food used a lot in old Westerns.
That’s how I’ve seen it spelled, too. I guess we took the French word & …englified? Americanized? Old Westified?…it.

When they said "quadrille," all I could think of was "The Lobster-Quadrille," the song the Mock Turtle recites in "Alice in Wonderland," describing the dance where all the turtles, lobsters, and other sea creatures dance on the beach and then throw each other into the sea. A fish invites a snail to join the dance, but the snail fearfully refuses because the dancers are being thrown toward France (y'know, where escargot is quite popular).

My mom's scalloped potatoes never had cheese in them, but they had diced ham.
I'm American and I've always called them scalloped potatoes.
In my experience, scalloped potatoes & au gratin potatoes are seperate but similar dishes. Au gratin is generally cheesy, scalloped is just creamy. I've also seen au gratin used for broccoli/cauliflower with a cheese sauce (and sometimes a little crispy breadcrumb topping)
@@andrealauer4493 as far as I’m aware you can have scalloped potatoes au gratin (with cheese and breadcrumbs) or just regular béchamel style sauce. But the part that makes them scalloped is the thinly sliced nature of the taters. I found it odd they just referred to all thinly sliced creamy cheesy potato dishes as au gratin potatoes. I guess being from Canada we are a little more aware of the meaning of the words au gratin, so it never got confused up here.

Have to complain about the "mother" one. They should have used the term "mother sauce". Never once have I heard of them referred to as just "mother". Unless it is slang that I have never heard of, but don't think it widely used.
I've only ever read the word "victuals" and TIL it's pronounced like the cat food.
