C/w Nana: Lao Style Fish Maw Soup (ແກງກະເພາະປາ == Kang Kaphaw Pa)

  • This is a thickened chicken-based soup with fish maws as the special ingredient. Additional textures are provided by chicken meat, quail eggs, bamboo shoots, and shiitake mushrooms. Some people also add bean thread noodles, but I usually don't.

    This reminds me of my aunt. She passed away and she was the only person who knew how to make this! And I loved it! Thank you so much for making this video bc it makes me think of her and now I gotta try making this myself

    Can you omit the fish maw or is it required to have it in the soup? My mom loves this dish, but I personally do not eat fish.

      Stephanie Burrell well that’s tricky. The soup is named after the fish maws. You could split the pot into two and add the maws to one pot for your mom and one without for yourself.

      Stephanie Burrell the fish maw does not have any fishy taste or smell. Even if you don't like fish, you can't tell it comes from fish at all. It looks like pork rinds to me and taste good.

      I use pork rinds in place of the fish maw.😉 It gives you the texture with out the smell.
