Preserving Corn: It's a Family Affair

  • Continuing the #everybitcountschallenge, I’m gathering with my extended family today to process a skid-load of corn from a local farmer. Join us for a three-generation food preservation day: we'll show how to preserve corn by preparing it for the freezer. Each family goes home with a year's supply of corn!

    Many hands make light work! Oh this brings back memories! ♥ I'm in my 60's and have never heard of the corn silker! What an awesome thing to have in your arsenal on a busy preservation day!

    Summer corn salad: either fresh corn or thawed frozen, halved cherry tomatoes, sweet or red onion, avocado chunks, lime juice, avocado or olive oil, salt, pepper, cilantro. So yummy. Best part is you don’t have to cook the corn. If I am making a big batch I leave the avocado out and then add it to each serving. That way if you have leftover corn salad you won’t end up with brown mushy avocado in it. You could also add black beans to this salad too.
    We love fresh corn sautéed with butter, salt, and pepper. You can add a bit of cream to make it a little more decadent!

      We have lots of cherry tomatoes right now; I think that salad would work well for us. Thanks!

    I’ve been wanting to do this. But, since becoming diabetic I can’t eat corn like I used to. Which is a bummer. Anyway. I love corn still.

      That’s understandable; it’s definitely a high starch food. Hopefully you’ve found other satisfying things to take its place.
