Young coconut is called 'buko." Thus you can ask for buko juice. Mature/brown coconuts are typically used for cooking. The juice from a mature coconut is tart so not very palatable. It is fermented into coconut wine or vinegar. Mature coconut meat is grated for cooking, and coconut milk can be extracted from it. Raw coconut milk is not usually taken unless cooked as the very high fat content tends to cause digestion issue. But cooked, it can be used to make oil or a soup base or dessert base.
