Hi. I find that Olive Oil invariably makes the dressing bitter (being naturally bitter!), which needs to be compensated for by adding sugar or some other element. Did you use a less bitter alternative to Olive Oil?

I do my own collection of Beats and carrots at least once a month but I'm trying to step my game up and do it every week once a week at least I never thought about adding shredded cabbage I use Italian dressing to marinate and let it sit for a couple hours then eat like that only thing I add onion and celery chopped up I'll see how it taste with raw cabbage maybe I'll use cooking wine or balsamic vinegar dressing I probably even might make it fresh the better
