How can you take a % deposit on an invoice, then input the remaining balance at a later date?

thank you for this! Does income have to be categorized manually every time? Or is that not true? I work with booking software for clients and the deposits from paid sessions come in under stripe payments with different transaction id's...I just want to make sure I'm not missing something?
