    請問點解我造的麵團不是白色或黃色?焗出黎個色唔系港式包包既顏色?我用的是instant yeast和黃糖,沒加蛋入麵團。究竟那里出錯?

      Top crust:
      - 35g sugar
      -3.5g baking soda
      -15g lard
      -6g egg
      -7g butter
      -2g milk powder
      -44g low gluten flour
      1. Make the night before. Mix all ingredients into a dough with no more granules. Place in fridge overnight.
      Bun/bread
      250g bread flour
      25g egg
      50g sugar
      1.5g salt
      3g instant yeast
      125g water
      37g unsalted butter, room temp
      1. Mix all ingredients EXCEPT BUTTER into a dough. When it before more smooth and elastic, add in butter and knead until smooth and shiny. Place into a bowl and cover with cling film. Let rise for 30 mins
      2. Cut into 5-6 portions (around 70g each). Roll into balls. Place on oven tray, cover and let rest for 10 mins.
      3. With the smooth side on top, make the balls tighter to let out some air. Then put on tray and let rise for 20-30 mins.
      4. Take the crust out of the fridge. Sprinkle some flour on the worktop surface. Divide into portions and roll out till flat.
      5. Spray some water on the risen dough and put crust layer on top. Brush on 1st layer of egg wash. Allow to dry then brush on another layer. (This gives it the nice crack according to him)
      6. Put in preheated oven @180c for 12 mins
