KALE SALAD RECIPE
8-10 cups of kale washed, stemmed and cut into thin ribbons
1/2 cup roasted pecans chopped
1 cup pomegranate seeds 1 medium pomegranate
1/4 cup sunflower seeds roasted and salted
2 ounces feta cheese crumbled
1/2 small red onion diced
1 cove crushed garlic optional
1/4 cup extra virgin olive oil
1/4 cup apple cider vinegar
1 tablespoon honey
Salt and pepper to taste
INSTRUCTIONS
In a large bowl combine the kale, pecans, pomegranate seeds, sunflower seeds and feta cheese. Set aside while you make the dressing.
In a small spouted cup or bowl combine onion, garlic, olive oil, vinegar, honey, salt and pepper. Mix well and adjust the seasonings.
Drizzle dressing over the salad and gently toss together. Serve and enjoy!

Such a great salad! I have a suggestion. Have you seen the America's Test Kitchen video about kale? For those who are not fans of kale because it can be bitter, they said to slice the kale FIRST, then wash it. When you slice the kale that is when it gives off the STRONG flavor, by rinsing it then it really helps eliminate that! Thanks for a great recipe!

A great way to make sure the salt is completely incorporated in the dressing is to put the salt and pepper on top of the acid and mix before adding the oils.

I have had one kale salad in my life at Penara and thought it was gross. The kale was like sawdust to me, and so I haven't tried it again since. I will give this one a go though, because so far, your recipes that I have made have been fantastic.

May I ask what brand of extra virgin olive oil you use for salad dressings? Some have such a strong, almost bitter, flavor.
This may be really dumb, but can you eat the entire pomegranate seed? With the flesh around it? When I was a kid I would just nibble at the tiny amount of flesh and not eat the seed in the middle.

Can I store the dressing on the counter or in the refrigerator for leftovers? I only used a bit for 2 individual salads and left the rest of the kale in the fridge without dressing. Thank you! 😁
So glad you enjoyed it. You can pop the dressing in the fridge - just make sure to take it out a bit before you are ready to eat it so the oil can soften.

Your trick about cutting onion is amazing I always have trouble cutting onion. in the kitchen I'm not very good. But I loved it when a expertise show how to do it right and delightful.
