- Some people can't grow a garden because they don't have the space or time or ability. But that doesn't mean you can't can stuff. Never canned before? No problem. This is a super easy recipe anyone can do.
I love pineapple!!! And the skins are so thick, it protects the fruit from pesticides, so it's perfectly fine to purchase the non-organic variety. Great source of vitamin C and manganese! And it also contains bromelain which can help with those sore muscles.
1 pineapple
2 cups sugar
2 tbsp lemon juice
Blend and cook to desired consistency.
1/4in headspace
10minute water bath
TADA!!! Delicious sunshine and taste of the tropics in every bite!

Well, I guess I need to add a few things to my grocery list. My brother's favorite is pineapple preserves, so perhaps I need to start canning. It's so much cheaper and tastier when it's homemade. Thank you!

Why fill jars 1/4 inch headspace and not inch or half inch headspace?
It’s the proper headspace for jams and jelly’s and preserves. Long as all the air is removed and they seal, you are good though.
Have 16 pineapple maybe a couple of weeks away.
Just put up some figs.
Notice you used a glass top stove. Wasn’t sure if canning pot, with the type of bottom it has, would work.
“They say” you’re not supposed to can on a glass top stove. But I’ve been doing it over ten years without any issues at all. I’d say just be careful setting down a heavy/full canner on a glass top and carry on;) Figs are my favorite!!!!!! Happy canning🥰
Hi, I do my water bath for canning on the side burner of my bbq grill.The flame is larger than the stove and it’s hotter. The kitchen and house doesn’t get too hot!!
To help with the water bath canning on the glass stove, choose a pot that has a flat bottom, it helps make the process faster too. Hope it helps
How many cups or ozs of pineapple chunks does 1 pineapple yield? Also, did you use the core? I'm just looking for the ratio of pineapple to sugar. Thank you! JC
I didn’t use the core. I save core and skins for tepeche (fermented drink).
I checked my recipe and didn’t write down the yield. But i use one pineapple with 2 cups sugar. Most of the time I double the recipe. I’ve also added cayenne peppers to it too;)

I haven’t used canned pineapple for this one. But I’d probably strain the juice so you know how much sugar to add🤷🏻♀️

What you looking for boiling it down is a temperature of 221°. It will Jell at that point
