Lardero Thursday is the name by which it is known, in various parts of Spain, the Thursday before Ash Wednesday. It is the traditional starting point of the carnival festivities, between January 29 and March 4 depending on the year. In some places it is known by other names, such as Dijous gras (Catalonia), Dijous de Berenar (Valencian Community), Dijous llarder (Balearic Islands), Día de la Mona (Albacete), Día de la Tortilla, Día del Choricer or Choricé ( Bajo Aragón), picnic Thursday (Salamanca), span day (Calatayud), etc. The word lardero derives from the Latin lardarius which means "fatty". Furthermore, in La Rioja there is a town called Lardero which received this name because of the importance of its salting products in Roman times.
