Yummy Gluten Free Buckwheat Bread! Naturally Fermented

  • Delicious and easy buckwheat bread made without flour.
    Ingredients: (put in a bowl altogether)
    ☞ Whole Buckwheat Grouts~ 500 grams ✓
    ☞ Filtered Water~ 3 cups ✓
    Leave for 24 hours. About half way, check to see if the grouts are covered slightly with water. If not, add a little bit of more water.
    ~Use a hand blender to cut the grouts into smaller pieces~
    ☞Add 2 tsp. of Grey Sea Salt ✓ (add to the buckwheat and water mixture)
    ♡Put parchment paper into bread form
    ♡Put Batter into bread form
    ♡Cover and come back in 12 hours
    Oven Temperature:
    ♡400 degrees F
    Baking Time:
    ♡1 hour
    Put fresh butter on a slice of warm bread and enjoy!!

    I need gluten and dairy free. Saved this recipe to make when my order of buckwheat arrives next week. I'm going to sprinkle sesame seeds on top before baking.
    Can I blend this until fine to make crepes with it?

      Thank you so much Nessa, I am very happy to hear that you will try this recipe. To answer your question, you absolutely can blend the batter to make crepes, you just may need to add liquid so the batter can be more loose and smooth just like regular crepe batter. I often make waffles for my family, and will be making a video soon. But, if you would like to try it now, I will write the recipe in the attached comment, due to word limit.

      Buckwheat waffles:
      ~200g buckwheat groats + 500g water~
      1. Steer in a bowl, cover and let it soak for 10-12 hrs.
      2. Rinse, place in a blender with 2 tbsp. honey. (or agave, maple syrup etc.)
      3. Blend so it's smooth. It will be thick, so take time and scrap the side's.
      4. When nice and smooth, place into a bowl, cover, and leave for 12 hours of overnight to ferment.
      5. Add 1 tbsp. coconut oil + 2 tbsp. thick yoghurt.
      6. Steer well and fry in your waffle maker.
      Enjoy with your favourite toppings and have a wonderful day! ❤

      I do have a recipe but it would require a sourdough starter. Also years ago, before I started making naturally fermented breads I would make a bread using buckwheat flour and active dry yeast. It was tasty but not as healthy as the one I am sharing in this video or as the one with sourdough starter. I hope your bread will turn out wonderful and you will enjoy it!     Can we use millet in place of buckwheat

      I never made this particular bread following this method with millet only so not sure how it would turn out ( but I don't see why it would not work) I made this bread with addition of millet 2/3 buckwheat and 1/3 millet and it was good. I used to make naturally ferment millet flatbed with herbs and it was very delicious. If you decide to try millet only please let me know. I would love to hear about your experience. All best :)
