The Chefs inside knew the rules for sure making that Neapolitan style pizza crispier.
Nope. He didn't know who this guy was until someone on the staff told him.
It's really Neo- Neapolitan pie. It has the same dough as Neapolitan but cooked at about 100° lower temp and in the oven longer which gives it a crisper crust.

You know damn well they crisped that pizza up just for Dave. The next pizza they make is a flopper. I think a new scoring scale is needed where you order a separate pizza under a different name & compare the one Dave gets to the one ordered "discretely".

Yo, I live in Lincoln, I had no idea you would visit our city. MoMo has some pretty good pizza. I think you had the server kinda nervous when you said, "This doesn't look Neapolitan." Some people around here aren't that direct. That's probably why he reacted like that. One bite, everyone knows the rules. 7.3 for a Neapolitan? We will take that all day.

@boathousejoed1126 Well, it is a Neapolitan pizza. If the guy had said that it isn't a Neapolitan, I am sure Dave would have corrected him. Just so you know, that is a margarita pizza. They charged 16 dollars last time I was there, so its not too pricey. A margarita pizza is a type of Neapolitan style pizza.

Yup. I think he used to score all decent neapolitans in the low 7s and then say, "It's not my style."
This should've been higher, but it seems like he's been trying to tighten up the scores for whatever the reason be.
I mean...it looked delicious. Looked to be a variation of a margherita pizza, which I love, and he said the sauce was "tangy," which I also love, and that crunch on the crust was impressive. I'd likely have given that a 7.7 minimum. Looked like a pizza I'd eat very quickly and get often.

Dave had that eureka moment. He may finally have found the neapolitan that broke from the pack and ran for the crispy end of the spectrum. MoMo's cracked the Portnoy Neapolitan Enigma.

I'm always 0.1 high, don't know how I do it. Looks like a standard pie though, fair score. Maybe a bit on the basic side even though they're trying to be a little more upscale, but it's Nebraska.
