RECIPE: Microwave Popcorn in a Paper Bag
    INGREDIENTS:
    1/3 cup popcorn kernels
    1 teaspoon vegetable oil
1/2 teaspoon salt (or to taste)
    INSTRUCTIONS:
1: In a small bowl, mix together the popcorn kernels, oil and salt.
2: Pour the popcorn mixture in a brown paper lunch bag.
3: Fold over the top of the bag 2 or 3 times to seal in the ingredients. Leave plenty of room for the popped kernels.
4: Microwave the bag at full power for 2 to 4 minutes, until you hear about 2 seconds between pops.
5: Carefully open the bag to avoid the hot steam. Pour popcorn into a bowl and serve.
    NOTES:
Make sure to stop the microwave right away after you hear only 2 seconds between pops as the popcorn can burn easily.
Add other seasonings to the popped corn if you would like.
You can spray the popped corn with a little olive oil to help the salt and seasonings stick.

Pro tips: if your popcorn isn't popping vigorously enough or burns before a significant number of kernels have popped, you either aren't adding enough kernels to the bag, aren't using a rotating carousel in the oven (crucial), or you are spreading the kernels too far apart on the bottom of the bag. In a normal store-bought bag of microwave popcorn, there is a "susceptor" made of a metalized film which converts microwave radiation into heat, but without that in a simple paper bag, you must rely on the high index of refraction of the food itself to slow the speed of the microwaves, trap them in the food efficiently and heat it internally. This works better for larger, more consolidated masses of food, so you should use at least 1/4th cup of kernels and you should tilt the bag to make a pile of kernels at one corner of the bag before putting it in the microwave. This will increase the thermal inertia of the mass of kernels, reduce their heat loss rate to surrounding air, and increase the microwave absorption efficiency by taking advantage of the microwave radiation-slowing effects of water-containing food's huge index of refraction when consolidated in masses at least as large as a half wavelength of the microwaves being used to irradiate it. In conclusion: use enough kernels , turn the carousel on, and pile the kernels up in a corner of the bag before popping . Enjoy your ultrafrugal science-oven popcorn.

I just finished up some popcorn experiments with my students and I could use some help on some thing. I would like to cook popcorn in a microwave, but I would like to do it where there is no other taste other than the popcorn itself. Essentially, I would like to replicate popcorn that has popped from an air popper, but done it in a microwave. If I just eliminated the salt from your recipe, with the popcorn still pop? In addition, would I get the same results from a stove top pan?
The question that I’ve been exploring with the students is if different methods of adding heat to popcorn will affect the taste. So, any insight you could give would be very much appreciated!

    • @CookingLessonsforDad
      @CookingLessonsforDad  Год назад +1

You can pop the popcorn without salt. I think you can pop it without oil too. The salt and oil give it extra flavor. If you pop the kernels plain I think they would taste the same no matter which heat method you use. But I am not positive so that is a great experiment! Let me know how it turns out.
