Ingredients:
1. Fresh basil leaves, 2 cups
2. Baby spinach, 1/2-1 cup
3. Salt to taste
4. High quality neutral oil
Add the basil and baby spinach leaves to the blender, sprinkle salt and pour in the oil.
Blend the ingredients for 4-5 minutes until smooth and vibrant green. Oil will get warm/hot during the process.
Next, strain the mixture through a fine mesh sieve to remove any solid pieces. I used cheese cloth on top of the fine mesh sieve. It will take few minutes for the oil to filter. Wait patiently.
Transfer the basil oil to a clean glass jar or squeeze bottle for storage.
Use this bright green basil oil to drizzle over salads, pasta, or grilled vegetables for a pop of flavor.
For the simple but delicious salad, I used Mozzarella pearls, basil oil and fresh herbs.

Hi @NilsFerry, thank you for pointing out. I tried this recipe with both the olive oil and neutral oil I used was peanut oil. I would say that neutral oil gives the purest taste and aroma of the herbs. Thank you! 😊
