    2 medium eggplant sliced lengthways
    1/3 cup avocado oil
    1 TBSP EVOO
    1 1/2 TBSP kosher salt
    Maldon salt
    squeeze of lemon

    Having been brought up many moons ago (I'm close to 70 years old) back in Newark, NJ and raised beside Italians (I was born in the UK) I had the fortune of becoming familiar with eggplant many, many times with my Italian neighbours, and always loved it. Your insistence on searing it the way you do is spot on with my experiences. And, for the record, I'm already at the salted stage for making this very dish this evening! Many thanks for a reminder of my youth.....

    I never actually removed the excess moisture from the eggplants, but now i know that and will be doing it from now on. Thanks sonny.

    I used to hate the texture and blandness of this thing. But today I followed your method and I love it. This plant is like a sponge so whatever you cook it with it will absorb. I used butter as well and its awesome.

    Great grilled over charcoal, topped with caramelized onions, or mozzarella cheese and a sprinkle of parmesan. OMG! GOOD!!!!

    OMG...I tried your recipe...I learned to cook eggplant by breading them first...They were ok but, not anything like yours. I went to heaven after trying them your way. I almost cried they were so good. Now I can't get enough of them. There should be no other recipe for cooking eggplant but yours. I can't believe how good they are.     I never used to like eggplant but the way you do it making sure it's really fried well change the game. I threw it in the oven with fresh mozzarella and marinara sauce on Italian bread for 10 minutes to make a grinder. I've already eaten two sandwiches today it's so good

    Here's a tip: brush the slices with egg white before frying. You'll need just a couple of tablespoons of oil.

      Egg white? Nooooo! I think you missed the point of this recipe. At the temperature the oil is when you put the aubergine into the pan a thin layer of albumen will burn to a hard, black crisp in seconds!
      It's the sugars in the aubergine that caramelises that gives the dark, crisp layer its flavour & texture.
      Egg white burns at a much lower temperature which will be bitter and... and... just no!

    I did not like eggplant until I was strongly urged to try fried eggplant just like this. Now, I really can't enough of it. I fix it almost every morning for breakfast and I just love it!

    Wow, eggplant cooking!
    I like eggplants. Usually, Koreans eat it lightly as a side dish with rice.
    There's a way to eat like this.
    Visuals are almost like steak. haha
    And the eggplant has lots of nutrients and it's healthy, but the kids don't eat as much as they think. I think it'll be good if you give it to them like this. People who don't like the feel of the eggplant.
    It's like a really good idea and a good recipe.

    I love how you improvise, I always haul out the collander and put eggplant in that in the sink while the salt works its magic. Thank you for correctly educating the public (sorry eggplants, more folks will now enjoy eating you so more eggplants will be consumed)

      Since you like people improvising I'll let you in one mine. I'm all out of paper towels, I just harvested a beautiful eggplant and looked up a video on how to cook it like a pro chef which brought me here. I'm gonna follow the recipe but with no paper towels I'm gonna put them on a cooling rack in the fridge like I do when I dry brine meats, not sure how long it will take to dry in comparison to steak but I'm about to find out.

    Doesn't removing the moisture make the eggplant too dry? I have a problem with eggplant absorbing too much oil--how do I avoid that?

      When frying in general lower heat tends to allow more oil to soak into the food, conversely, hirer heat will have less oil penetration. I assume that a higher temperature produces more steam pressure, keeping the oil out.

    That sketch made me laugh out loud... I nearly choked on my aubergine. I figured out you can cook these with virtually no oil.... pan fry with water, and they end up acting like they're fried.

    When they are early in their growing stages, they are white - like eggs attached to a plant. Therefore, eggplant. The full grown stage is irrelevant to the American version of the name.

You should do a live video one evening. If you do a live make sure that you put it timer on it so that people know ahead of time.

    The name eggplant originally comes from the shape and colour of the first eggplants (non-BT eggplants) which were round in shape and white in colour resembling an egg.

    Used this recipe - eggplant soaked up all the oil on the first one and tasted like it. 2nd batch pan got too hot and ended up tossing the pan in the trash. That said, I got a good one out of it and it was ok. Still prefer grilling them on a hot grill.

    They are also done in oven nicely, since oven dries them perfectly. Put olive oil on both sides and they will be nice & charred.

    Sonny, I heard the history of the name is originally in England the eggplant was tiny. Like a small egg. Hence the name.
